Weve been hard at work on a recipe that includes you guessed it seven different grains. Lets see if I can name them all: barley, wheat, rice, oats, corn, rye and...spelt. Yep, I think thats it. The result is a perfect summer beer. Its about 5% ABV and displays a nice fruity yeast character that finishes dry and slightly hoppy. Its seven kinds of wonderful!

Tap at Paradiso Dupont. Pours a near cloudy yellow (barely hazy) with a small, fizzy white head. Okay retention and no lace. Aroma is all clovey Belgian yeast, lemon, fresh grass. Taste is very Belgian in character: dry, candi sugar, big clovey yeast character. Moves to grassy bitter full of citrus peel and soapy hops. Dry, fizzy, watery palate. Not necessarily rich or hoppy. Comes across as a pilsener with Belgian yeast.

Served on tap at the The Bruery Provision. The appearance is a slightly cloudy golden hue. The flavors and aromas have a bit of a barnyard note that everything rides on. Im not sure if I am tasting that wrong. A bit of other grains are picked up, some rye, and barley in particular, I like the concept and there are some cool flavor mixes in there but Im not so sure Im digging it.

Tap at Paradiso Dupont. Cloudy yellow, small white head, scant lacing. Aroma of hay. Taste has lots of lemon, oily with a very bitter finish, too bitter for a saison. Very light body. This one misses the mark.

A hazed blonde saison with a thin white head. In aroma, a nice lemony saison with light cloven notes. In mouth, a nice smooth saison, with fruity notes, light orange pulp, oily mouthfeel, quite classy and smooth. On tap at ChurchKey DC, Sept. 18 2010.

(On draught at Sun Devil). Pours slight hazy golden with thin white head. Aroma is very much like a saison-maybe a little spicy from the rye. Semi-sweer with bitterness increasing with time. Light bodied with thin texture. Finish is initially quite bitter, but not as noticeable with more sips. Decent beer.

on tap at maxs. tepid gold, pond scum white head, thin ring. Transparent lemon-gold, soapy, lght brett and grainy nose and flavor, more Brett in the latter. Lightly stinging carbonation, vey singular citrus notes with the pedio/Brett, almost diaper quality. The citrus draws too much attention to grain, stinging body, carbonation too high. Descent, but Id prefer less harsh front, wheaty back appreciated.
