COMMERCIAL DESCRIPTION
Tart of Darkness is a traditional stout that we aged in used oak barrels from The Bruery that had previously housed beers such as Cuivre™ or Black Tuesday®. We then brought them over to Bruery Terreux, added our special blend of souring bacterias and wild yeasts and watched nature take its course. The result is a perfectly tart yet awesomely dark and roasty, sour stout. Not a style you will see very often, and in our opinion, not a style seen often enough. This unique stout has notes of tart plums, roasted coffee, vanilla and oak.

Light unclear dark brown colour with a average, frothy, good lacing, mostly lasting, beige head. Aroma is moderate to heavy malty, caramel, berry. tart, wood. Flavour is moderate to heavy sweet and moderate acidic with a long duration, tart, berry, wood - oak. Body is medium, texture is oily, carbonation is soft. [20120616]

75 cl bottle, thanks Greg. Pours hazy dakr brown with a shortlived yet huge tan head. Aroma is breadish to light tarish dark roasted malt, citric and fruity to barnyard too. Dense citric and tart, makes me shiver. Barnyard, tart, fruity and citric. Smooth mixed citric and roasted dark malty finish.

Bottled. A pitch black with a tan head. The aroma has notes of wood, brettanomyces, malt, and caramel. The flavor is sweet with notes of brettanomyces, matl, and caramel, leading to a dry, tart finish.

Draft. Pretty much black, small beige edge head. Aroma of slightly sour cocoa and subtle coffee. Taste is prominent yet soft sour plums, dates, port wine. Delicious.

Medium body, very tart dark dried fruit, pruney, heavy Brett, some wood. Very, very tart finish, overripe dark, rotten fruit combined with some sweet oaky accents. Nice one. 160612
