COMMERCIAL DESCRIPTION
Monastic breweries wrote the book on complex ales that weave notes of dark fruits, spices, caramelized character and warmth into each sip. The Order summons that tradition and adds local inspiration. Our darkening, Belgian-inspired abbey ale features dark-fruited character from dates, Belgian-style sugars and subtle spicing from coriander, which compliments the Belgian yeast esters.

On tap at Hops & Pie. Reddish brown appearance with a fluffy, lingering, tan head. Aroma of fruity esters, Belgian yeast, herbal spice, candy sugar, light caramel malt and light bread. Similar flavor, rich, fruity, yeasty and spicy with just a hint of alcohol. Medium to full body with a lasting, herbal/spicy finish. Good.

Its like my uncle, who claimed to be a monk, once said " remember billy (my name is not billy) when youre about to engage in the act of insemination, always wash your hands before and especially after" .. A mild Belgian offering, bruery can do much better.

750 ml bottle into chalice, bottled on 12/12/2016. Pours slight hazy ruby red, light orange/copper color with a 1 finger fairly dense and fluffy light khaki head with good retention, that reduces to a small cap that lingers. Light spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of huge raisin, plum, date, fig, apricot, apple, peppercorn, coriander, clove, caramel, brown sugar, toasted biscuit, brown bread, herbal, and floral; with lighter notes of banana, nuttiness, chocolate, toffee, and yeast/toasted earthiness. Damn nice aromas with great balance and complexity of fruity/spicy yeast, dates/coriander, dark/bready malt, and light earthy hop notes; with great strength. Taste of huge raisin, plum, date, fig, apricot, apple, peppercorn, coriander, clove, caramel, brown sugar, toasted biscuit, brown bread, herbal, and floral; with lighter notes of banana, nuttiness, chocolate, toffee, and yeast/toasted earthiness. Light-moderate yeast spiciness and herbal bitterness on the finish; with lingering notes of dark fruits, apricot, apple, banana, peppercorn, coriander, clove, caramel, brown sugar, toasted biscuit, brown bread, herbal, floral, light chocolate/nuttiness, and yeast/toasted earthiness on the finish for a while. Fantastic complexity, robustness, and balance of fruity/spicy yeast, dates/coriander, dark/bready malt, and light earthy hop flavors; with a great malt/bitter/spiciness balance, and zero cloying flavors after the finish. Light dryness from bitter/spiciness, increasing through the glass. Medium-plus carbonation and body; with a very smooth, moderately creamy/bready, fairly sticky, and slightly chalky balanced mouthfeel that is awesome. Alcohol is very well hidden; only a mild warmth lingering after the finish. Overall this is a fantastic Belgian strong dark ale! All around outstanding complexity, robustness, and balance of fruity/spicy yeast, dates/coriander, dark/bready malt, and light earthy hop flavors; very smooth and dangerously easy to sip on for the big ABV. Pretty much perfectly balanced flavors, with amazing complexity all around. A highly enjoyable offering.
