COMMERCIAL DESCRIPTION
Tripel Tonnellerie is a 100% barrel fermented version of a Belgian Abbey Tripel. The base beer carries a classically clean maltiness, balanced by a fruity aroma and a dry, spicy mouthfeel. Extended fermentation in oak barrels inoculated with wild yeast allowed the beer to develop the rustic, earthy tones of a classic countryside biere de garde resulting in a uniquely flavorful beer, suitable for beer and wine lovers alike.

Bottle opened up at the 2016 Ottawa Year-end Gathering. Somewhat hazy golden pour with a frothy white head that eventually calms down. Some oak and light brett, vinous, slightly sweet and a bit musty / dank with yeast and lemon zest at the end. Moderate carbonation and strong body, booze comes through more on the palate, some coriander and burnt malts on the finish. Interesting.

Bottle: Poured a golden color tripel with a medium size foamy head with OK retention and some lacing. Aroma of oak and dry vinous notes is interesting but not close to the style. Taste is a nice mix of oak, vinous notes, rustic malt with some funky yeast notes also noticeable. Strange residual sugar notes also subsists. Body is about average with good carbonation. Not bad but not close to a tripel.

A hazed golden ale with a thin white head. In aroma, sweet fruity malt with light Brett, light cave, light pepper notes, nice and smooth. In mouth, a nice sweet fruity malt with light black pepper notes, light curacao, coriander, light perfumy notes, nice and dry. Bottle at Ottawa Xmas gathering 2016.

The beer is a light golden yellow color. A bit hazy. Medium sized head, sorta fizzy. Teensy bit of lacing and not so great retention. The aroma has a nice funk note on top of fresh pale malt and a lemony wine barrel flavor. A touch of grass. Moderate oak. Nice fruitiness from the wine with grapes and some stone fruit. A touch of sourness. Good stuff. Taste doesn’t quite live up to it. It’s a touch too sweet. The oak helps out some but can’t quite contain some of the raisiny Belgian sweetness. It still has a solid vinous fruitiness. A little barnyard funk. Medium-light mouthfeel. Well-hidden alcohol for 9.5% abv. Interesting and nice but the base beer isn’t quite right for me.

Bottle @ Abijen’s Christmas non-tick tasting. Golden pour. Aroma of brett, grassy grain and citrus. Taste of yeast ester, mild citrus, wheat, brett and a little horseblanket. Nice one.
