COMMERCIAL DESCRIPTION
Crafted as an authentic Munich Helles, increased to Bock alcoholic strength. It’s a nice malty and hoppy golden lager, with lightly toasted notes, a hint of spice, and a crisp finish. Bigger than life but usually behaved, just like Mighty Carl, Patron Saint of many St. Louis area bars. The man himself is much harder to describe. Some would say handsome, charming, charitable, debonair (wait, what?!) who also happened to paint and tuck-point our entire building. Yeah, so? If you want a beer named after you too, we’ve got more huge chores around here that take four weeks out in the sun baking the entire place to a nice average temperature of 100 degrees. Best yet, Carl showed up with his own supplies some days. God sent Carl to earth to be our friend. You can keep Carl on earth by drinking #Carlbock.

Draft served in a dimpled mug glass. The body appears UT ’Longhorn’ orange in color with some haze, and is topped with a slight head. Aroma can be described simply as honey malt, which translates to a honey biscuit flavor over a medium body. Not cloying, nor feels heavy, so it is quite quaffable given the board listed 6.6% ABV for this particular batch. I enjoyed it as I do love how Civil Life does even keel beers well.

Sampled from the tap at GTMW 2016. Pours a near clear copper amber with a near white head that dissipates slowly to the edges. Aroma has sweet grains and biscuit with some bread supporting. Flavor has notes of sweet grains, bread and toffee with some biscuits underlying.

Pour is a dark amber with a small white head. Aroma is a decent caramel malt with a wee bit of probably a noble hop. Flavor is more of the sweet malty grain. Finish is lager watery but warming and chewy all the same. Bock’s are way low on my want list but this was ok and easy to drink.

Braudog (6763) - Yorktown, Virginia, USA - NOV 22, 2014
Draft at International Tap House. Thick malt all the way -- visuals, texture, flavors. Nice body, like I used to say in high school. But then there’s really nothing to make it stand out from the crowd of very good beers nowadays. This is a basic cereal-based beer, just the slightest hint of a bock-ish burn. The pedestrian would only say, "it’s beer." Clean and evenly made. (#5869, 11/22/2014)

Bif (2259) - St. Charles, Missouri, USA - SEP 7, 2013
On tap at Shamrocks. Served a deep copper color with a small head and just bits of lacing. Aroma is mild with roasted malt, bit of grain and spice. Taste follows with a mild roasted malt, mix of caramel and bit of honey. Has a easy bitterness and dry finish. Fairly medium body, subtle crispness, smooth and nicely balanced. Good beer for the style.

On tap at Civil Life. Pours a hazy dark gold with a nice off white head. Soft caramel aroma. Sweet caramel malt flavor along with a little bread dough. Soft mild hoppiness at the finish, mapley. Excellent.

UPDATED: OCT 13, 2014 Tasted on tap at the brewery on Father’s Day/Bloomsday. It poured a nice clear golden amber colour with white foam, lasting with lace. Crisp grains with slight residual sweetness, fruit, toast. Light body, medium carbonation, surprisingly well-rounded bready mouthfeel with a mineral essence, with a crisp lager finish. Smooth and refreshing, an excellent example of style. If your experience of bockbier is AmberBock or Shiner Bock, this’ll blow your mind.

On Tap at ITAP in Chesterfield. It poured an amber color with a small white head. The aroma was of sweet medium malt-caramel with some spice hops. The taste was sweet medium malt-honey/caramel and some secondary spice hops. It had a syrupy medium body. Well done and dead on for style.
