COMMERCIAL DESCRIPTION
Sour Red Ale, aged in red burgundy barrels with cherries.

This beer is the second iteration of a project we have been working on at the brewery for a few years now. We wanted to create a modern sour ale aged in barrels that had the same complexity and depth of flavour that our favourite sours from the USA offer. After using a Belgian yeast strain to give a good foundation on which to build, we aged the beer in Burgundy barrels with the fruity for well over a year. Adding cultures of Brettanomyces, Pediococcus and Lactobacillus at set points let us sour the beer gradually over many months and give layers of flavour that can only develop over time. The rich fruit aroma and flavours compliment the sharp sourness which subsides for more malt and yeast character to come through. Lively, dry and thirst-quenching, this beer is a beer to savour; a complex and mature sour ale that we feel fulfills our original objective.

Bottled, from Systembolaget. Clear burgundy colour, brief head. Tart oaky cherry aroma. Tart with medium body and clean, rounded mouthfeel. Vinous oaky cherry, some vinegar and notes of saccharine. Low bitterness. Some beautiful flavours on display, perhaps not all in perfect harmoni.

375ml bottle from Systembolaget. Hazy dark copper color, brief head, poor lacing. Tart and sweet aroma, oak, fruity, cherries, yeast and sugar. Tart and dry mouthfeel, medium to full bodied, medium carbonation with small and shard bubbles, kind of work nice. A lot of tart cherries in the taste, green apples, caramel and woody. Long dry and tart finish.

Drinked in bottle bb 01.06.21 this beer was good to be aged, but for me was impossible to resist. A sour red (one of my favourite beer) aged in red burgundy (one of my favourite red wine) with cherries (a fruit that personally I really like). On the nose wing vinegar, smell of good quality wine factory barrel cellar, after five seconds good quality cherries. In mouth is medium bodied, right sensation of sourness everything very balanced and very enjoyable. Personally a very good beer. Well done

Gran birra. Colore tendente all'ambra, torbida con un'unghia di schiuma. Al naso la parte frutta di ciliegie è molto piacevole e la parte acida è amabile e non troppo aggressiva. In bocca acida, abbastanza alcolica, piena, rotonda. Finale pulito.

UPDATED: NOV 7, 2017 Reddish brown colour with small head going to the sides of the glass. Aroma has sour red berries, wooden barrel, sour cherries too, sweetish red berries as well. Taste has sour cherries, red berries, wooden barrel notes, quite balanced sour, maybe slight vanilla as well. Mediumish body with high carbonation.

Beautiful 375ml champagne bottle with real cork and golden wire cage, also a beautiful label. Pour a dark orange pink color, with almost no head. Aroma is of yeast malt, and very dry cherry fruits. Flavors of sour cherries, wheat, liquor, and malts. Nice dry sourness, nice balance of flavor, but a bit tin overall. Enjoyable yet not overly complex, still tasty and refreshing. Good attempt at a sour ale.
