COMMERCIAL DESCRIPTION
This is the typical Tilquin blend used for making Oude Gueuze Tilquin à l’ancienne, which means a blend of 1, 2 and 3 years old lambics from Boon, Lindemans, Girardin and Cantillon, but which was intentionally not refermented. Therefore, it is flat. Once aged in bottle, this blend would give an Oude Gueuze Tilquin à l’ancienne. To avoid any refermentation and carbonation, this blend is kept in the fridge. It is served on cask only on festivals and opendoors as a traditional flat lambic, and sometimes sold to local bars.

No head at all, no carbo. But that doesn’t spoil the fun. Wry and puckering mouthfeel. Barnyard and citrus in taste. Astringent. Very nice.
