The Quetsche Tilquin à l’ancienne (6.4% alc / vol) is a spontaneous fermentation beer obtained from the fermentation of destoned fresh purple plums (Quetsche véritable d’Alsace, close to the Damson) in a blend of 1 and 2 years old lambics for a period of 4 months. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 3 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon. The taste is slightly tart but also fruity and round which makes this Quetsche à l’ancienne may be more accessible for non-experts or less sophisticated palates. It also has a slight dryness from the skin of the plums. The nose perceives a plum brandy perfume.

First batch (2012) with a BB date of 23/02/2022 was made with ’Prune de Namur’ and limited to 500 bottles.

Second batch (2013) limited to 5000 * 75cl and 10000 * 37,5cl was made with ’Quetsche véritable d’Alsace’.

2013 2nd Batch 375ml bottle drank in November 2015. Aroma of fainted barnyard funk, hints of hay, and a light and delicate nod at plums. Flavors have similar notes of the nose, a very round barnyard funk, hay, and hints and nods at plum and apples. A sour acid coats the tongue beautifully. Two years has done pleasant things to this one. Very tart, nice carbonation. Lovely.

Pours with standard lambic color. Aroma: leather notes, village, very fine, intensive, some very delicate notes of plums too. Taste: very sour and a bit tarty finish. Nice. Plums undetectable:(

Huge thanks to Erzengel for sharing! Beer in the glass orange-golden, small head. Sourish-fruity aroma. Starts intense sourish, notes of some fruity, apple, pear, apricot. Mild sweetish hints. Finish well balanced sourish. Nice.

Bottle at the 11th Brugge beer Festival, Brugge, Belgium. A hazy amber/red coloured pour with a thin white head that vanishes very quickly. Aroma is funk, tart berries, wine. Tastes quite tart, berry fruit, sour, slightly mouth puckering acidity. Not really my style but this was well made and I reckon it would be great on a hot day rather than a freezing cold day in northern Europe.

375 ml bottle, served in wine glass. Poured amber with one finger White head. Aroma: plums, cherries, oak wood, wet leather, blue cheese, barnyard, cowdung, funk, tart. Taste: plums, sour, tart, oak wood, leather, farm, sour cherries, lambic, white wine, champagne, blueberries. Medium body with dry sour finish. Very good!

Fantastic find. 2015/16 vintage Fizzy carbonated pink grapefruit appearance with a translucent murky body Easy on the palate. Medium mouthfeel. Rounded acidity. Plums and guava. Before I knew it I finished the 12oz pour!

NYE bottle. Refreshing, crisp, with quite high acidity, funk is on an average level. Wet leather, unripe green fruits. Very good.

Bottle. Hazy orange with a minimal white head. Aroma is fresh, tart, dry, distinct plums, a bit funky. Taste is fresh and tart with light frutiness, lemon and some wood. Light body, high spritzy carbonation, dry mouth feel. Short after taste.
