COMMERCIAL DESCRIPTION
The Quetsche Tilquin à l’ancienne (6.4% alc / vol) is a spontaneous fermentation beer obtained from the fermentation of destoned fresh purple plums (Quetsche véritable d’Alsace, close to the Damson) in a blend of 1 and 2 years old lambics for a period of 4 months. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 3 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon. The taste is slightly tart but also fruity and round which makes this Quetsche à l’ancienne may be more accessible for non-experts or less sophisticated palates. It also has a slight dryness from the skin of the plums. The nose perceives a plum brandy perfume.

First batch (2012) with a BB date of 23/02/2022 was made with ’Prune de Namur’ and limited to 500 bottles.

Second batch (2013) limited to 5000 * 75cl and 10000 * 37,5cl was made with ’Quetsche véritable d’Alsace’.

Shared 2014-2015 bottle. Hazy orange to amber beer with small white head. Aroma of red fruits, berries, grape, light barnyard and leather, with notes of apricot and a hint of plum. Taste is dry, medium sour, of red fruits, berries, grape, citrus, lemon, berry skins, light barnyard, leather. Notes of berry skins, leather, fruits in the finish. Light to medium body, soft to average carbonation. Round and not rough. Very fruity and funky, but with just a hint of plum. Overall: great, elegant lambic.

Bottle @ home. Hazy peachy to red colour with no head. Smells fruity, red fruits, yoghurt, sour, dusty. Tastes sour, red fruits, yoghurt, cherries. No carbo, medium body.

To gueze z dodatkiem śliwek. Same śliwki może jakoś się tu nie wybijają, ale piwo jest potężnie owocowe, rześkie i świeże. Zdaje się aspirować do miana najbardziej pijalnego piwa z niedawno pitych lambiczi, a mimo to jest bardzo kwaśny. Nut funky jest tu nieco mniej, ale i tak nietrudno je zauważyć. Super sprawa.

UPDATED: DEC 2, 2017 Bottle. Pours a hazy bright orange with a slowly fading off white bubbly head. Aroma is of stone fruit, apricot, plums, citrus, tart. Taste is of plum, citrus, grapes, funky, slightly acidic, tannic. Watery to light oily mouthfeel, bone dry, medium to hard carbonation.

Hazy golden orange from the bottle. Funk and brandy, plum and oak. Flavor is similar though I found myself liking the nose juuuust a touch better. Moderately funky and sour.

Had a 2015-2015. Very lively for a Lambiek. Aroma is plums with funky lambiek. Rather complex velvety palate with soft sour. Taste is plums with horse blanket lambiek. Blends really well.

750ml bottle share at 2. Bielefelder Bierfest. Slightly cloudy, brass colour with with small, bubbly white head. Tart-ish vinegar aroma, some fruit acid but no fruity flavours. Taste is sour, vinegar sourness, fruit acid, no hints of plum, a minimally funky and woody touch.

Pours a nice orange velvety colour. Quite fruity, moderate sour. Smooth and balanced. Enjoyable.

The plums are not that harsh, but it is there. Lightly coloured. Sourness is strong.
