The Quetsche Tilquin à l’ancienne (6.4% alc / vol) is a spontaneous fermentation beer obtained from the fermentation of destoned fresh purple plums (Quetsche véritable d’Alsace, close to the Damson) in a blend of 1 and 2 years old lambics for a period of 4 months. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 3 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon. The taste is slightly tart but also fruity and round which makes this Quetsche à l’ancienne may be more accessible for non-experts or less sophisticated palates. It also has a slight dryness from the skin of the plums. The nose perceives a plum brandy perfume.

First batch (2012) with a BB date of 23/02/2022 was made with ’Prune de Namur’ and limited to 500 bottles.

Second batch (2013) limited to 5000 * 75cl and 10000 * 37,5cl was made with ’Quetsche véritable d’Alsace’.

Aus der Flasche (bbe 2026-01-19) mit Alsace Pflaumen im Muted Horn Berlin 2017-08 getrunken. Das ist so ein perfektes Lambic, das es fast schon wieder langweilig wirkt. Fluch und Segen zugleich. Leider hätte ich mir ein deutliches Pflaumenaroma gewünscht. So war hier leider nur eine nicht definierbare Fruchtsäure erkennbar.

Surprisingly smooth like snake skin. Hazy pink pour without much head or lacing. Grapefruit bretta and a touch of pepper. Tap at Churchkey.

Bottle, 2013-2014 vintage. Rose gold in colour with moderate spritzy carbonation. Aromas of funk, lemon juice, strong florals, and dried wood. Fairly earthy on the palate with elements of kitchen herbs, lactic acid, driftwood, strong lemon, and reeds. Plums have all but dropped off by this point, but the added florals and enhanced body are their remaining contribution. Delicious.

0,75l from bottle shared by me at a Party. Vintage 2015/2016. BB 02.02.2026. Amber hazy color, almost no head. smells cheesy, earthy, musty, funk, green apples, barnyard, nice smell, not much fruits though. medium to full body, no carbonation, slick mouthfeel. tastes earthy, grassy, peppery, some funk, barnyard, citrus, some wood. finishes dry and lightly sour with notes of barnyard, grass and citric notes. very good one, rather dry and acidic but overall still very nice, unfortunatly fruits not very noticeable and I would prefer some carbonation.

Bottle (2015-2016). Pours foggy orange with almost no head. Aroma is vinegar, acid, plum jam, spices, light tropical fruit, old water. Taste is acid, vinegar, pickled plums, some dry notes, oak, cherry notes, starch, cyanide. Sour and acidic beer!

Orangish pour, smaller white head, small specs of lace. Aroma of fresh plums, vinagarette, barnyard funk, oak. Fruity up front, light vinegar gives way to plum, red grape, barnyard funk, oak, light herbal presence. Lighter body, prickly carbonation. More more more!

Bottle 2015-2016 (BB: 19/01/26). Pours hazy orange with small white head.Aromas of wood, bread and plums.Medium body with moderate acidity.Amazing taste of a wine character.Plums, grapes, funk and some wood.All nicely balanced.An amazing beer.

Aroma is light fruity and acidic, with light citrus and wet wood. Taste is absolutely wonderful. Tart and citric, yet surrounded by a sweet cloak of plum juice and wood notes. Soft carbo. I love this stuff. Am I turning into a lamb(ic) of God?
