Bottle. Batch 25, 2013. Pours with a clear, pale golden hued body with a fizzy white head that fades to nothing. Minimal legs. Aromas are of mild spices (cinnamon, nutmeg, allspice), earth, tannin, apple skins, oak, caramel, vanillin, graham cracker, mild cardamom. Flavors are bone dry, a hint of raisinated fruit, the mildest hint of sulfur, light 4EH phenols, tannin. Rich but very dry. Nice stuff! Hints of spice. Medium+ Carbonation. Bottle @ Home. Clear golden pour with a small white head. There’s a nice baked apple nose along with some vanilla, almond, and white grape. Slight apricot, too. Maybe a little bit more of a spirit character to both the aroma and flavor. Sort of a brandy and bourbon character. There’s a good bit of crisp apple, some pear, and a light grape acidity. Pours clear gold with an orange sunrise. Musty apples, cobwebs, oak, attic aroma. Drink this warmer than usual, the bourbon character really blooms. Vanilla and toasted oak mingle with thin apple juice. Pretty pleasant. Could use some body. joet (2646) - Wilsonville, Oregon, USA - NOV 7, 2013
Golden liquid, with a quick white head. Sherry, wood, almond, dark pome (apple pie) are welcome companions to abundant floral apple notes. Feel is medium to low medium effervescence. Tiny bits of chlorophenol and perhaps acetaldehyde emerge somewhere in the mid 50 degree Fahrenheit range in this monster 8.8% cider.
