COMMERCIAL DESCRIPTION
Cold weather calls for savory sippers, and Barred Rock is the perfect winter warmer. A blend of late-season Sonoma County heirloom and cider apple varieties, aged for over 3 months in bourbon barrels. Heady butterscotch on the nose, plush mouthfeel, amaretto and vanilla notes, and a long, rich finish. This cider was fermented to dryness, no backsweetening, so your palate will experience all that the barrel aging has to offer, without any cloying effects. This is dessert in a glass, but it’s also delectable with pumpkin pie, apple crisp, figs, anything with caramel and maple syrup. Oddly tasty with coffee, too! LET THIS WARM UP! 60 degrees or more, don’t be afraid. The warmer, the more decadent.

Bottle. Batch 25, 2013. Pours with a clear, pale golden hued body with a fizzy white head that fades to nothing. Minimal legs. Aromas are of mild spices (cinnamon, nutmeg, allspice), earth, tannin, apple skins, oak, caramel, vanillin, graham cracker, mild cardamom. Flavors are bone dry, a hint of raisinated fruit, the mildest hint of sulfur, light 4EH phenols, tannin. Rich but very dry. Nice stuff! Hints of spice. Medium+ Carbonation. Body is medium low, but there is balancing tannin and acidity. Not bad at all, quite good in fact. Hides ABV quite well.

Bottle. Pours pale golden, fizzy with minimal head and lacing. Aroma is apple, strong funk, light bourbon, a bit of whiskey sour. Flavor is light sweet, medium funky, apples and Brett, whiskey sour. Light plus body.

Bottle @ Home. Clear golden pour with a small white head. There’s a nice baked apple nose along with some vanilla, almond, and white grape. Slight apricot, too. Maybe a little bit more of a spirit character to both the aroma and flavor. Sort of a brandy and bourbon character. There’s a good bit of crisp apple, some pear, and a light grape acidity. Pretty nice.

Pours clear gold with an orange sunrise. Musty apples, cobwebs, oak, attic aroma. Drink this warmer than usual, the bourbon character really blooms. Vanilla and toasted oak mingle with thin apple juice. Pretty pleasant. Could use some body.

Golden liquid, with a quick white head. Sherry, wood, almond, dark pome (apple pie) are welcome companions to abundant floral apple notes. Feel is medium to low medium effervescence. Tiny bits of chlorophenol and perhaps acetaldehyde emerge somewhere in the mid 50 degree Fahrenheit range in this monster 8.8% cider.
