As someone who absolutely loved Guillemot (it was the best beer I had when I visited TH) this was something of a letdown. It wasn’t BAD by any means, but the whiskey barrels seemed to muddle the nose a bit into less than the defined roasty character of the original Guillemot and the finish was substantially more acetic than in the base beer. Retained the nice raspberry jam flavor but just a lot harder to drink. Good but far from the masterpiece that base Guillemot is.

500ml black wax bottle at 8.5% abv thanks to trade with bigda83! Pours a deep brownish black with thin ring of bubbly tan head that leaves light lace. Aroma of lactic sour, dark fruits, and hints of vanilla. Taste follows, a hint of funk and dark roast, acidity is mild, but lasting. A hint of acetone on the front end, but disappears quickly. Bottle: Poured a pitch-black color ale with a medium light brown foamy head with OK retention and limited lacing. Aroma of vinous notes with some tart notes and light roasted malt notes are also perceptible. Taste is a mix of vinous notes with some tart notes and some light roasted malt with light oak notes also perceptible. Body is pretty full with medium carbonation. On tap at CBC15. Black with no head. Aroma of chocolate, roasted malts, funk, cinnamon, light tart notes, spices and farmhouse. Taste is roasted malts, chocolate, funk, acetic, cinnamon, slight lactic and citrus notes.

still opens with good hiss, jet black and puffy cream head laces well. Lightly acetic cherry, some chocolate and brown sugar/malt, decent balance, plum in deep scents. Front is highly acetic, cherry with light chocolate malt, thin by mid palate with sticky roast elements growing late, chocolate sweetness lasting amidst bitter leafy roast. Unfruity, stale and boozy heat version of a young Oerbier Reserva, needs richer booze and balls but still good at this advanced age, lightly green plastic finish.

Bottle optained as an ’extra’ in a trade with Eric. Thnx bro ! Pours dark - black, actually - with a small layer of fast fading, white foam. Smell is sour, wint hints of Imperial stout ( burnt malts ) and some oak. Dry tart as well as some wine notes, that are far more subtle than previously mentioned aspects. Taste is very dry, sour, tart, bit ’plastic’ like, colliding beerstyles I suppose. Imperial stout clearly shines trough ( was there some insanity left in the barrel ??? ) the first taste is really unbalanced, and totally colliding. Pour is black with a small amount of beige head. Nose has a light wood, some toasted grain, hints of roasted malt, and some sour cherries. Flavor is well balanced, a fair bit of roast, light booziness, some pleasant sour cherry, maybe some lacto in there. Well carbonated, light body, easy drinking, fizzy finish. Draught at Copenhagen Beer Celebration 2015. Murky deep brown liquid with a medium off-white head. Aroma of lemon, roasted malt, apple skin, light acetone and toast. Taste is light sweet, light bitter and light to medium sour with notes of lemon, dried fruit and toast. Medium bodied with medium to high carbonation. Dark murky brown, almost black with a small off-white head. Aroma is tart with red berries, hints of vinegar, earthy and leathery, wet wood and roasted malt. Taste is light sweet berries and fruits, sour vinegar hints and a light roastiness. Finish is dry and tart wood, berries, vinegar and roasted chocolate notes, some spicy earthiness. Light to medium bodied, average carbonation, slightly dry.
