COMMERCIAL DESCRIPTION
Brewing is a lot about tasting new food and trying interesting pairings. Because sometimes you taste something that’s interesting and then you start examining how it could be translated to beer. We were already quite fond of our beer Liquid Confidence. A rich, smooth imperial stout brewed with three different chilies, Ancho, Guajillo and chipotle. This beer is really all about how we create beer. We don’t want to brew a chili stout, we want to brew a stout with chili. Get the picture? The four ingredients in a beer should always be the grand picture, where extra ingredients are so to say the photoshopping of the picture. Extra ingredients should add to the perception of the beer in question without dominating the beer. So when we brainstormed about Liquid Confidence, we were happening to chew on some liquorice while tasting the beer. It quickly became evident that the combination of liquorice and chili worked really well together in a beer (and you suddenly realise why chili-liquorice already exists on the market). Instead of chewing liquorice and spitting into the beer, we started some test brews to find the right balance between chili and liquorice in a beer. It is truly amazing how many different kinds of liquorice you need to sample and we had to get through nine bags of candy in one day to find the right one. Working can be hard… :) So we can now finally present you our beer Liquorice Confidence! Well balanced, warming and exotic due to the chili, hint of smoke from the chipotle. Dense mouthfeel and lingering sweetness together with a fragrant salty aftertaste from the liquorice. Matured directly on liquorice for months, this beer has developed beyond expectations and we were almost at the point where we didn’t want to sell, just because we wanted to keep it to our selves…

The aroma is malts, caramel, coffee/chocolate and hints of chili peppers. Pours dark brown with mostly lasting tan head and excellent lacing. The taste is sweet and a touch bitter. The body is medium/full, the texture creamy, the carbonation lively and the finish long. Very good, tastes of chocolate, slight coffee and chilli peppers. A little late burn, seems more alcohol than peppers, but very good flavors.

Bottle shared with Esp0r and simonsen at the Beer & Boardgames in the woods trip 2016. Black body with a small tanned head. Roasted aroma with chocolate and chipotle, mild smoky, sweet licorice. Taste is fullbodied, dark roast and cocoa, heavy on licorice, light salty, plums, with a roasted mild burning finish. Very nice.

Bottle. Pours nearly black with a dark beige head; aroma is licorice, malt, and vanilla with hints of wood. Taste is sweet with licorice, alcohol, roasted malt, and chocolate with hints of wood and vanilla; finish is bitter and slightly dry. Surprised the alcohol was not hidden better.

Bottle, 375 ml, shared with JFK10000 and Max. Pours dark brown with brown head. Roasted, chocolate, malty, spicy, medium chilli, cocoa, some fruity notes, moderate sweetness. Some dry bitterness in finish. Full bodied.

375 ml bottle into snifter, no bottle dating. Pours opaque dark brown/black color with a 1-2 finger dense tan head with fantastic retention, that reduces to a nice cap that lasts. Dense soapy lacing clings around the glass, with a fair amount of streaming carbonation. Fantastic appearance. Aromas of big milk/dark chocolate, cocoa, coffee, caramel, toffee, vanilla, fudge, cream, licorice, and toasted dark bread; with lighter notes of nuttiness, smoke, chile peppers, molasses, leather, tobacco, and roast/toasted earthiness. Damn nice aromas with great balance and complexity of dark/roast/bready malt, licorice, and light chile pepper notes; with great strength. Taste of huge milk/dark chocolate, cocoa, coffee, caramel, toffee, vanilla, fudge, cream, licorice, and toasted dark bread; with lighter notes of nuttiness, smoke, chile peppers, molasses, leather, tobacco, and roast/toasted earthiness. Mild roast bitterness and slight chile spiciness on the finish; with lingering notes of milk/dark chocolate, cocoa, coffee, caramel, toffee, vanilla, fudge, cream, licorice, toasted dark bread, light pepper/smoke/molasses, and roast/toasted earthiness on the finish for a while, Incredible complexity, robustness, and balance of dark/roast/bready malt, licorice, and light chile pepper flavors; with a nice roasted bitter/sweet balance, and zero cloying flavors after the finish. Minimal dryness. Light-medium carbonation and full body; with a very smooth, rich, and creamy/silky/velvety mouthfeel that is insane. Alcohol is insanely well hidden with minimal warming on the finish. Slight hint of pepper heat creeps in on the finish through the glass. Overall this is an amazing spiced imperial stout! All around incredible complexity, robustness, and balance of dark/roast/bready malt, licorice, and light chile pepper flavors; very smooth and dangerously easy to sip on for the huge ABV. Amazingly rich, decadent, complex all around; with an unreal mouthfeel. A highly enjoyable offering.

Bottle (375 ml) from Systembolaget. Black with large beige head. Intense choclatey roasted malt aroma, some tar and coffee, a touch if liquorice. Alcohol well hidden. Full bodied, low carbonation. Semi sweet, low to medium bitterness.

UPDATED: JAN 15, 2017 Pours a black color with a fair amount of brown head considering de ABV. Aroma has lots of licorice, chili, salt, pepper and wood. Taste follows the nose, licorice and wood, cocoa and slightly salt, but the profile is mainly sweet. Slightly heat in the aftertaste due to the chilis, but very mild.

12.7 oz bottle from Party Source at home. Pours a dark cola brown color with a medium sized khaki colored head. The aroma and flavor have roasted malts, anise, peppery spice, smoked pepper, chocolate, pretty smooth for 14% with a hint of the booze when it warmed up, good beer.
