Dette er et eksperiment, der nærmest har taget over hånd. Ov-ral- er To Øl/Mikkeller collab øllen, Overall IIPA, bare i en wild yeast version. Resultatet er en hyper kompleks øl med et ordentligt skud humle, som bliver balanceret af gærens syrlige og funky noter. I sandhed en ener.

English: This beer is one of a kind. It is our good "old" To Øl/Mikkeller collab - Overall IIPA - fermented with wild yeast. The result is a dry hop bomb that has been balanced by the tart and funky wild yeast notes.
When we added the wild yeast the fermentation went out of control and made a 100% attenuation - leaving no left over sugar in the beer.

Draught @ [ Copenhagen Beer Celebration 2012 ] @ Spartas Lokaler, Faelledparken in Osterbro, Copenhagen, Denmark.

Clear light to medium orange colour with a small to average, frothy, good lacing, mostly lasting, white head. Aroma is moderate malty, toasted - caramel, fruity, light to moderate hoppy, grass, pine, mango, leather. Flavour is moderate to heavy sweet, light to moderate acidic and moderate bitter with a long duration, tart, grape, leather, fruity, hoppy. Body is medium, texture is oily, carbonation is soft. Light dull amber body, moderate sized off-white head. Good lacing and retention. Nose is full of floral hops, mango, grapefruit, and a dusty mildly funky lacing that brings some hay. Flavor is similar, generally a straight forward IPA accented by a soft bretty yeast profile that is pleasant. Medium bodied, assertive carbonation, dry, lightly funky finish. Interesting.

Sampled at THE FESTIVAL in MA. Pours an amber body with small to medium off white head. Aroma is pine, fruity hops and malty bread. Mouthfeel is dry and carbonated with notes of fruity hops, sweet bread, Brett, and pine needles.

Tap at CBC ´12.....It pours hazy golden with a medium off white head. The aroma is lots fruity notes, brett, caramel and hops....The flavor is brett and again loaded fruits notes.....very nice......

Bottle @ The BeerMongers... Poured hazy, amber/golden with a thick, frothy, egg/off-white head. This was bitter and giant hop bomb. Pretty intense and super flavorful. Drying towards the finish, lots of carbonation and full bodied. In the finish was a hint of wild yeast funk. But nothing near tart or acidic. I’d be interested to see how a bottle of this develops.

On tap at Mikkeller Bar. Cloudy, amber liquid with medium off-white head. Aroma of tropical fruit, blackberries, fruity funk, grapefruit and caramel malt. Taste is dry and medium bitter with a light to medium sour/tartness. Medium bodied with low carbonation. I’m really growing fond of the combination of IPA and brett.

Draught at Mikkeller Bar, Copenhagen, Denmark. Shady deep golden, medium white head. Strange perfumy aroma with some barnyard notes, and way too much alcohol. Meidum bodied, soft carbonation. Sweet and bitter. Overdone.

Amber beer with a small head. Aroma of leather, spices, pear, a little ginger and some sweets. The beer is full bodied and a little creamy. Intense dry saison notes that works very well with the spicy fresh hops. Fresh sticks and a strong taste. An exciting innovative IIPA. Nicely executed!

Aroma: lots of ripe fruits, sweet white grapes, candy, sweet melon, honey drops, some grapefruit. Clear bright orange beer, small irregular off-white head, unstable, little adhesive. MF: good carbon, medium body. Taste: very sweet and sugary start with an alcohol burn, exotic fruit candy, pineapple, canned peaches and very bitter hops. Aftertaste: sweet and sugary, grapes, grapefruit, citrus, pretty bitter, cloying sugary, lychees, alcohol warming the throat. I think the funky wild yeast was dead before eating the sugar...
