COMMERCIAL DESCRIPTION
In his most notable mosaic work, Sosus of Pergamon depicts doves sunning atop a golden chalice. The image was said to be so enticing that real birds flew into it while trying to reach their stone companions. This single-hop showcase is inspired by the beauty of divinity of the Sosus mosaics. Just as the doves discovered their golden nectar, discover the irresistible nature of the Mosaic hop.

22oz bottle pours a gold with some frothy, white head. Nose has lemon and C hops, oily, mild herbs, grass, mild honey. Flavor is lemon and lime, mild malt, C hops, hop oil Oily finish. You'd never guess this was Mosaic, not a standard Mosaic profile.

The classicism in the name and label is stunning--I didn't know it but was fascinated to read up on it later. As for a beer, I was not similarly captivated. I'm not a hop-head, though I do like great DIPAs, and in this case, I found the astringency too difficult to overcome on the path to enjoyment. In the future, I would be one of the birds sunning itself on the edge of the bowl rather than the one dove drinking from it. Bottle from Darren.

Bottle. Cloudy yellow pour with a white head. Sweet tropical fruit and slight grassy notes. Good bitterness in the finish, but slightly astringent.

Bottle at the October DC Ratebeer tasting. Thanks David! Slightly hazy golden yellow with off-white head. Aromas of citrus, pine, floral notes, malt. Tastes of citrus, floral notes, pine, malt. Medium body with a dry finish.

Pours medium gold with a thick, white head. Powerful aroma of citrus and grapefruit. The trend continues with a strong grapefruit flavor on top of a mild malt backbone. Taste is essentially bitter from start to finish. Good, but not an every day beer.

Bottle at the October DC Ratebeer tasting. Poured a clear golden yellow color with a large white head. Aroma was tropical fruit notes, citrus notes. Light hop notes, juicy with some light bitterness on the finish.

From a bottle at the DC RB gathering October 15, 2017. Pours a clear gold with a thick off white head. Aromas of caramel and tropical fruits. Flavors are moderately bitter. Very tasty stuff.

Bomber style bottle shared by dubtully and consumed in Belgian snifter glass. Aroma is big and assertive citrus and pine resin. Plenty of white head on a golden orange hued ale. Taste leans a little bit more bitter and slightly soapy with plenty of resiny/pine elements. Citrus rind complements a citrus sweetness...grapefruit and tangerine, and a healthy dose of pineapple. Surprisingly more complex than anticipated from a single hopped effort and does it without any sort of malt backbone. This really frames the Mosaic hop in a great light. Once again Toppling Goliath exceeds expectations.
