COMMERCIAL DESCRIPTION
While most plum wine or sake is made with shochu, fermented plums, or grapes with plum flavors added, this is the only "ume-shu" crafted with premium Japanese sake and the region’s highest quality ripe green plums, or "shiro-kaga". The plums are soaked in sake for over three months to achieve a rich, sweet aroma and subtle plum flavors.

Bottle. Pours still, clear pale yellow. Aroma is plum, alcohol, lightly fusel notes, light figs. Flavor is fresh plum, figs, light rice notes, alcohol, and a sweet fruit finish. Light body.

Bottle. No head (still). Body is light yellow. Aroma is a strong note of peach/apple/pear/plum candy, light notes of alcohol, grain, mold. Flavor is moderately to heavily sweet, lightly to moderately acidic. Finish is lightly to moderately sweet, lightly to moderately acidic. Medium body, watery texture, no carbonation, lightly to moderately alcoholic, lightly astringent. Subtle plum flavors? Wow. If this is subtle, I’d hate to have something that’s assertive. Smells like a fruit soda / wine cooler, very little else. The rice character is quite faint. Very sweet in the mouth, again reminiscent of soda pop (sans carbonation). Not sure why I expected anything better.
