COMMERCIAL DESCRIPTION
Naturally fermented cider made only from local Asturian apples, selected by AACOMASI, the Asturian Association of Cider Apple Growers. The production process is checked and certified by ECA, the Certification and Quality Guarantee Organization, who ensure that the whole process has been followed through and is implemented according to the guidelines leading to the award of the ‘Naturally Fermented Quality Cider’ stamp of approval.

Colour: Lemony-yellow on green. Bubbly on pouring. Pours well. Fruity, unripened apple bouquet. Nuances of dried roses with a hint of freshly churned butter, with a pleasant, tart taste. After tastes of citrus fruit, grapefruit and lemon linger on the palate.

Bottle. No head (still, poured as vigorously as I could without getting cider all over the room, so as not to offend Spanish purists). Body is medium yellow. Aroma is notes of cheese, apples, lemon juice, and mold. Flavor is lightly to moderately sweet, moderately acidic. Finish is lightly sweet, moderately acidic. Light to medium body, watery texture, flat carbonation, moderately astringent, lightly alcoholic. Well, it’s got nothing on the best Normandy ciders, but at least it doesn’t just smell like apple juice. I’m personally not fond of the strong cheesy smell, but I could see some folks enjoying that. Nice balance, it’s assertively tart. Overall just ok.

Bottle sample during RBSG. The cider is a hazy yellow color with a fizzy white head that dissipates quickly. Dry and floral aroma. More of an earthy and funky taste. Medium body and higher carbonation.

Sampled at the Basque Market festival during the RBSG 2017. This poured lemon yellow with a small bit of white foam. Nose of funky apples and some citrus. Medium body. The flavor here is really funky with a healthy dose of other favors being mainly lemon which really works well here. Really tasty. I like this one a lot.

Bottle. Hazy yellow color with a small head, disappearing. Aroma is citric, tannins, and apple. Taste is itric, tart, brett. Dry finish, and surprisingly well carbonated compared to most of the sidras I had in various pubs/restaurant in Asturias.
