Cider made from mixed varieties of cider apples: bitter, tart, sweet, bittersweet etc, according to traditional methods. Fermented in temperature-controlled wooden casks till January and February when it is repeatedly decanted between casks.

Colour: clear, transparent, bright yellow. A complex bouquet with hints of ripened apple; good presence in the glass. Fizzy and bubbly

hayduke (5757) - Eureka, California, USA - AUG 4, 2017
At the Basque Market during the RBSG 2017. Pours a cloudy gold with a white head. Nose of apples and funk/ Medium body. Flavor is funky with tart apples. Finishes quite funky. Delicious .

Pouring at the Basque Market during our RBSG17 stop for Basque ciders. Pours a hazed gold with a thin white head that falls after the pour. Soft apple, hay, barnyard funk and yeast. medium bodied, soft acid, a bit of vinegar, apple, big funk and musk. Funk on the finish, soft musk and apple.

Bottle. Pours cloudy pale yellow. Aroma is funk, damp cellar, dust. Body is light, softly sour and funky, some apple. Quite tart. Easy, but quite nice.

Bottle. Pours hazy apple juice colored. Nose is dry apple. Palate is sour apple, lemon. Finish is sour apple. Not bad.

Hazy yellow. Aroma is dry apple and yeast rests. Taste is dry sour apple. Much mealiness. Some funkiness. Not complex. Not my thing.

UPDATED: JUN 29, 2017 Bottle from a supermarket in Benasque. Poured from a height, but not as crazy high as the experts do. Hazy golden color with white head that goes down quickly. Aroma is earthy, barnyard, a touch manure, mealy. Taste is earthy, dusty, mealy apples, mineralic. Tannic and mealy finish. Low carbonation, but something present. Too mealy for me, but still okay and interesting. EDIT: The second 2-finger thick pour is much less mealy and tastier. 3.3

Bottle at a Sidreria, poured trough a machine. Crisper, fresher, less mealy. Good

(Keg at Sidrería, Helsinki, 20170429) The cider poured golden and hazy. No head. Aroma had tartness, apple juice and sweetness. Palate was medium bodied and dry with no carbonation. Flavours were tartness, apples, sourness, sweetness and apple peel. Aftertaste was tart and sweet. A nice easily drinkable cider.

Bottle - Light funk and up front acidity. Cloudy gold with no head. Acidic and a touch a apple peel. Simple.

70cl bottle, chilled. Pours a slightly hazy yellow gold colour, with no head and a sharp aroma of vinegar, apple, funk. Flavour is barnyard, fruity, apple, woody oak, vanilla, some vinegar, solventy, with caramel, straw, hay, and drying tannin. Light bodied, low carbonation, dry funky light tannic finish. Quite drinkable.

Tasted on the 10/09/2016. Hazy golden yellow colour with no head. Aroma of apples and spices. Taste is very acid and fruity. Next one please!
