Draft to snifter at Transient. This batch is 4% abv. Looks good; a slightly hazy lighter gold with white head that slowly but steadily dissipates into lacing. Smells pleasantly tart, biscuity, and lemony with a bit of salt in the background. Tastes like it smells with a softer medium light-bodied mouthfeel. 500ml bottle thanks to Dunt! Pours hazy pale straw yellow with small fizzy head. Nose is grainy lemon, tart citrus, pineapple, yogurt and cheese,hint of funk and minerality. Taste is crisp, bright, juicy tart barnyard lemon, soft funkyness, minerality, nice saltiness, cereal grain and lacto. Finishes with nice tartness, soggy grain, lemon cake, cereal, citrus salt. Shared 16.9 oz. bottle poured to snifters, showing a cloudy, orangey gold color with sudsy, soft white head foam that reduced to a bubbly ring & film, and left some waves & spots of lacing on the glass. The nose was light grain, rind & funk, somewhat dry, with esters as lemon & orange. Light to medium bodied, with lively, seltzer-like carbonation, the taste was less funk, citrusy tartness, dryness, and subtle, complementary silkiness to the mouthfeel. Curious to test the waters with yet another new Chicago brewery, I opted for one of their lighter samples. My reward was a respectable gose that felt true to the spirit of the style while adding a subtle Midwestern twist. Should I come across their beers on draft I will be sure to give them another look.
Aroma / Appearance - The golden semitransparent body looks the part of a typical gose complete with a salty aspect and citrusy core.
Flavor / Palate - The clean mouthfeel refreshes from the first sip well into the finish. The texture begins to get a bit heavy by the last sip however but never in a problematic way. If this represents their abilities I think they have a promising future.
