COMMERCIAL DESCRIPTION
Mainly available filtered in bottles, though part of the production goes unfiltered into cask.
The traditional brewing process used in the production of Traquair House Ale consists of the following; 1. Traditional infusion mashing process. The wort is then drawn off and boiled during which process the hops are added. 2. The wort is now cooled and pitched with top fermenting yeast under controlled temperature. It is then fermented in oak over a period of seven days. The beer is then transferred into cold storage tanks or barrels and matured over a period of weeks. After maturation the beer is filtered prior to packing.

500 ml bottle. Pours a dark amber color with very little head, no lacing. Aroma is rich caramel malt, cocoa, and oak. Taste is smooth and fairly complex. Moderate sweetness is nicely balanced by a light peaty smoke and cocoa. Light bitterness and a small burnt oak flavor. What keeps this from being great is that it’s thin and a little watery. Love the flavors here the mouthfeel is below average.

Bottle. Dark amber, average fully diminishing head. Moderate to full, malty and sweetish aroma, some caramel and roasted malt, light dark fruits, some notes of wood - light vanilla, light hoppyness. Body is medium to full, malty and sweetish flavor, some caramel and roasted malt, light dark fruits, some notes of wood, light hoppyness. Finish is average to long, malty and lightly sweetish, some caramel and roasted malt, some notes of wood - light vanilla, light hoppyness and faint alcohol. Really nice strong scotch ale - not too sweet/too much caramel, not too oaky.

Pours brown, thick and hazy. Small head, off-white, creamy. Good lacing. Mild aroma, led by sweet chocolate, cookies, vanilla, smoothly fruity. Smooth palate, medium body, balanced finish. Taste is licorice, vanilla, amazing balance, deep and compex.

330ml bottle. Dark brown ruby tinged colour, foam off-white head leaving alittle lacing and aroma of doughy malt caramel, chocolate & dark fruits. Taste is sweetish biscuity malt, treacle, dark fruit with chocolate, alcohol and a light bitterness. Smooth mouthfeel, medium bodied, soft carbonation, some residiual sweetness at the finish. Quite drinkable.

From notes: Poured clear brown with a touch of orange, and a 1-finger bone-colored head. Vanilla, woody aroma with a touch of caramel. Medium body with a brief finish. Woody vanilla flavor, with a note of leather at the back. Caramel and nutty notes appear in the taste as it warms.

Bottle 33 cl, BBE 08/2022. Pours clear dark amber in color with a nice creamy tan head. Really mild aroma with some dark malts and faint hints of toffee. Malty taste, some salty licorice and perhaps dark fruityness too is present. Feels a bit light at first, but somehow steps up and gets better towards the finish. Behind the salty licorice there’s some vague smokyness and bitter chocolate in aftertaste.

330ml bottle from Appellation Wines, Dalry. Pours clear red-brown, thin white head just sustained with gentle carbonation. Aromas of burnt sugar and spice. Taste brings vanilla, quite sweet, but not overly so. Light bitter at the end. Good.
