It’s officially summer and that means cucumbers are just starting to come into harvest. Cool cukes are such a nice cooling summer treat, and we decided to make a summer Saison with them. Adding ~24lbs of English cucumbers per barrel, and just enough lemon zest to lend an overall brightness to the beer, this recipe is certain to become an epic summer time favorite.

ineedbeer (2149) - Oakland, California, USA - FEB 13, 2017
Poured from a 750 ml, 2013 vintage bottle. Aroma is a bit dulled with some honey and caramel notes. Some moderate cucumber with light citrus notes. Hints of stone fruit and cherry pie. Some light grassy and herbal phenolic notes. Look out, this one is a gusher! Pours a hazy, copper-orange with a large, moderately thick, white head that recedes quickly to the edges where it lingers for a bit. Light lacing and no legs. Flavor is very sweet with lots of honey and caramel. Some light citrus notes and acidity with medium light cucumber notes. Medium low bitterness. Some cherry pie and stone fruit notes as well as light herbal phenolics. Lingering honey sweetness with hints of lemon and cucumber. Mouthfeel is medium light bodied with high carbonation. Low astringency and low alcohol warmth. Overall, this is not a good beer. It has a very sweet character to it and some honey notes. it may have been refreshing and crisp when fresh, but I sat on this for way too long and its not good now.

A hazed blonde saison with a thin white head. In aroma, nice fruity malt with light cucumber pulp, lime, light mineral notes, pleasant. In mouth, a nice sweet fruity malt with silky cream to mouth feel, cucumber, light vanilla, light vanilla... Cucumber vanilla ice cream.

Pours a hazy golden yellow from the slowly gushing bottle with bubbly white head. Aroma of nice fresh cucumber with a Belgian funky farmhouse year underneath. Taste follows with a bit of a lactic bite and nice pleasant funk. Solid for what it is.

I had this on draft at the taproom Labor Day weekend. Tremendous cucumber aromas in comparison to other cucumber beers such as The Rare Barrel’s Emerald Vision and Fieldwork’s Salted Cucumber. If you think aromas like that are easy to come by, you are mistaken. But Trinity seems to be able to achieve them on a regular basis. They know their fruit! (The cucumber is technically a fruit, by the way.)

Bottle. Opened carefully over the sink. Hazy yellow with a small white head that has good retention. The aroma is a fairly nice fresh cucumber aroma. The taste is soured cucumbers set in a semi-sweet saison base. The palate is medium. Finishes long and dry. Overall: Decent

Capped and waxed bottle. Clear and pale Colo with thick foamy head. Aroma is moderate cuke. Soft Belgian biscuit, lightly sweet. Flavir has only light cuke and mostly an average Americanized Belgian ale. I guess I was expecting funk but it has none. I rated this just bc I like cuke beers. This wasn’t in my top tier.

Bottle. Pours a cloudy yellow with medium frothy white head. The aroam si strong cucumber, citrus, funk. Thin mouth, tart, cucumber, wood, spice, funk, light finish, good.

Wow, bit of a slow gush, pours bright lemony and slightly hazy with a huge foamy white head. A swirler this beer is for sure. Aroma is my favorite brining juicy cucumber, almost a pickling for this yeast they has tartness a bit, and sweet wild saison yeast. Flavor brings a bit band aidy, but pleasant, wild yeast and tartness with cukes that complement each other with a sublte puckering, pleasantly sweet and nice on the palate.

Golden yellow body, mildly hazy, quarter inch of white head. Huge cucumber aroma. Freshly sliced garden aromas, salad. Meghan Trainor is all about that bass. Trinity is all about that cucumber. Tasty and well done. A fun beer well worth trying.

The Well, Brooklyn bottle: pours cloudy with a white head. Aroma is cucumber with some funk. Taste is like a cucumber cocktail. Nice carbonated feel to it. Weird and interesting.
