COMMERCIAL DESCRIPTION
The origins of this Saison go back to the 1800’s when saisons brewed in Wallonia were rugged, unrefined, and edgy. Going back to the original roots of Saison, we used a large amount of ancient spelt grain, vienna, and raw wheat. Another first for Colorado Springs, this beer was fermented in primary with wild Brettanomyces and lactobacillus, and a blend of two Saison yeasts to create a lightly sour, extremely aromatic, and spicy yeast profile. Being a ’Provisional’, this beer was both dry hopped, aged, and naturally carbonated for authenticity.

Bottle #38 shared by Paul at tasting at my house. Pours cloudy gold with off white head. Nose/taste of spicy breads, yeast, mint leaves, menthol, lemongrass and herbs. Medium body.

Bottle poured a cloudy yellow with a small lingering white head. Aromas of lemon, floral, light straw and a hint of spice. Palate was light bodied and smooth with a dry finish. Flavors of straw, barnyard, light citrus and a hint of leather with a smooth dry lingering funky citrus finish.

GABF 2009. Pours clear light yellow with an average, frothy white head, mostly lasting with good lacing. Aroma is heavy malt (cookie, hay, straw, cereal, meal), light hop (flowers, herbs, grass), heavy yeast (sweat, horse blanket, barnyard, cheese, earth, musty) with notes of grape, apple, pepper. Medium bodied, sticky texture, lively carbonation, and a chalky finish. Long duration, light sweetness, acidity, and bitterness. Brettanomyces character.

(Draught) Pours a cloudy golden body with a medium white head. Aroma of sweet tart dust, florals, herbs, cereal, grain, and horseblanket. Flavor of herbs, methol numbing properties, brett, earthiness, some lacto, and grass with a dry finish.

Bottle at a tasting at James’ place. Pours a very hazy gold with a medium sized white head. Minty, eucalyptus, medicinal, but still rather nice, very herbal and bright musky yeast. Medium bodied, spicy and still a touch herbal, but not in a bad way. Minty, herbal, spicy with a touch of juniper. Long herbal touches, spicy yeast. Nice and quite different.

Sample from bottle shared by Brad @ Jackie O’s. Pours a cloudy yellow gold color with a medium sized white head. The aroma was horseblanket, funky, peppery, herbal (lavender?) with hints of the brett. The flavor has a nice funk to it with floral, herbal and spicy (white pepper) components. This was complex and intense; I liked it but was happy with a sample instead of a full glass.

2010 bottle @ Armin’s post-Scott’s Summer Saison tasting. Gusher but it didn’t appear so at first. Cloudy, yellowish orange appearance with a white head. Fairly spicy, nicely floral, tangy bretty, spicy pineapple/lemon, lightly earthy aroma. One of the best aromas of an incredible saison tasting night. Cinnamon spicy, fairly spicy, refreshing lemon spritzy, somewhat tangy/lightly sour, nutmeg spicy, a touch woody flavor. Bravo. Bravo. Bravo. One of the best Saisons I’ve ever had. Should have shared this with Scott and co. Funky, spicy, fruity, refreshing. Fuck yeah. I guess I’m rating way higher than anyone else, but sweet jesus, this is just about perfect right now.

750mL at Campdown Brewdown. Pours a full haze murky white peach. Weak head. Nose is lavender soap, salt, lemongrass, and ginger. Sort of like a Grandma’s house aroma. Taste is soapy and malty. Bitter chemical freshener. More like a witbier from the spices. Quite tart and salty/buoyant.
