The malt bill of this late 1800s inspired Belgian ale consists of a combination of barley, oats, wheat, rye and spelt. For the fermentation we use a blend of Saison yeast with three older Brettanomyces strains. This beer aged on lavender French oak Chardonnay barrels. 6.5% ABV; pH 5.2; rare.

Bottle. Moderate to heavy bread and straw for the malt, moderate lemon and grass for the hops, heavy barnyard and faint basement for the yeast, with proseco, unripe peach, vinegar and wood in the background. Head is small, frothy, white with some slippery spots of lacing and is almost fully diminishing. Color is murky medium amber. Flavor starts slightly sweet and moderately acidic, and finishes the same. Palate is light to medium, slick with a lively carbonation. Excellent Saison with a touch of sweet fruitiness to balance the tart wildness.

12.7 oz bottle shared with drsordr. Pours a slightly hazy golden color with a small off white head. The aroma and flavor have pale malts, oak, Chardonnay character, noticeable Brett character, dry, mild funk, good fruit character with a hint of lavender. This has a nice combination of flavors with just a hint of tartness.

Bottle shared by alexsdad06 pour clear light gold with thin white head. Nose moderate funk, lemon, and some floral. Fairly pleasing nose for the style. Taste nice tart up front, then fruit and floral, lemon, kiwi, white wine, and sweeter. Minimal oak late. Fairly refreshing.

Bottle from Andersons in Dublin: hazy yellow, thin white. aroma of nice funk, floral, perfume. tastes are moderately tart - herbal, pepper spiced, woody, brett, lemon, floral and funky. moderate dry on the thin to medium palate. I know its based on a saison, but just a sour in my book. good at that.

12 oz. bottle, pours a cloudy golden yellow with a small white head. Nose brings out vinous notes, lots of lavender, and brett. Flavour is complex and cohesive, with lots of lavender upfront, followed by big funky brett notes and white wine barrels. Very spicy, bretty, and complex. Could use a bit more carbonation. Very good stuff.

Pour on tap, hazy golden pour with white head, aroma brought notes of grain, bread, biscuit into a bit of grass, herbal notes with lots of the lavender notes into a bit of tart lemon, oak, touch of lemon peel into a bit of fruit, some spice notes. Taste was a mix of funk, oak, earth into big lavender, a bit of yeast, slight bread into a bit of lemon, slight white fruit, finishing slightly tart, dry.

Aroma of oak, tropical fruit, tartness slight funk. Taste is the same but brings out the lavender as well. Slightly sweet tart finish. Well balanced, very complex and all around quite a good beer. Less funky than saison man and has a slight lactic tart finish to it, which is quite nice. Subtle sourness but nice. Really like this as I drink it. Bumping up from 4 to 4.1---Rated via Beer Buddy for iPhone

Hazy gold pour, limited head. Aroma belies the sour flavors, slightly herbal. Quite tart for a saison, but initially a bit too much so and not very interesting. I leave this one sitting for an hour or two; upon returning the carbonation is markedly low and the tartness remains but at room temperature it is reasonably enjoyable despite the lack of focus.

750 ml. bottle. Pours golden orange with a decent white head. Aroma of fruit, funk, spice, and floral. Taste is tart fruit, funk, lavender, citrus, spice, and funk. Thought a bit too much lavender. Pretty good.
