COMMERCIAL DESCRIPTION
The malt bill of this late 1800s inspired Belgian ale consists of a combination of barley, oats, wheat, rye and spelt. For the fermentation we use a blend of Saison yeast with three older Brettanomyces strains. This beer aged on lavender French oak Chardonnay barrels. 6.5% ABV; pH 5.2; rare.

Strong lavender upfront in the nose. Brettanomyces tartness also comes through in the nose. Taste is very floral. Sweet taste from the pumpkin and a nice spice note to wrap in up. Tartness lingers in your mouth after you swallow.

Poured from a vintage 2013 750 ml bottle. Aroma is citrus forward with some light pineapple as well. Moderate lavender notes. Some light oak and white wine characteristics. Light grain notes with hints of honey. Some light pear and stone fruit as well. Pours a slightly hazy, yellow gold with a small, thin, white head that recedes quickly to the edges and disappears. No lacing or legs. Flavor has a medium light acidity, slightly sharp, with a medium light, balanced sweetness. Light grain and honey notes. Fairly fruity with citrus, tropical fruit, pineapple, melon, pear and stone fruit.Some light oak and white wine notes. Medium light lavender. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a nice saison. Nice fruity notes that are well complimented by the white wine barrels and lavender. The acidity is present, but soft and mellow.

Pours a hazy golden with a white rim that leaves low lacing. Nose is pretty oak/wine-forward but you also get some (cheesy) funk. Taste is more wine, flowers and grapes (Kool-Aid-ish). Body and carbonation are moderate, mouthfeel certainly vinous. Overall a nice winey saison, not the most polished but I still enjoyed it nicely.

Bottle 375ml. Pours blond/ golden with low head. Aroma is of spices, nice yeast action. Taste is of spices, fruits, some acidity. Palate: Medium body, soft carbonation. Overall: Very nice stuff, clean, crafty.

Bottle (375 ml), shared. Clear pale golden with a small white head leaving no lacing. Aroma is of chardonnay/fruity notes, lavender, rye spiciness and Saison yeast. Taste is fruity with chardonnay notes, lavender, rye spiciness, brettanomyces and peppery notes. Light to medium body. Moderate carbonation. Fruity and lavender finish. Good perfumy saison with nice complexity and drinkability.

bottle shared by tom10101, many thanks! pours unclear bright gold with a small white cap offering some retention and lacing. lots of spices, citrus zest-peel; soapy flowers, leathery bretts, soft wood, dill, floral honey, very fruity saaeison yeast, complex yeast esters from different strains. bright carbonation, light body, dry and tart woody-spicy finish. very nice spicy chardonnay-aged saison.

375ml bottle. Pours a cloudy pale yellow-orange with yeast particles floating around and a small, fizzy, short lived, white head that leaves spotty lacing. Sweet, fruity aroma of orange, lemon, lavender, white wine, brett and oak. Sweet, complex flavour of wheat malt, rye, lavender, lemon, brett, white wine, spice and oak with a dry, tart, slightly acidic finish. Light to medium body with an oily texture and lively carbonation. Very nice, has some complexity to it.

Shared 12.7 oz. bottle poured to a snifter displaying a hazed straw color, with head foam that broke down almost immediately to a light, bubbly ring, and a few, translucent spots of lacing. The nose was subtle, yeasty funk, faint floral expression, with a light scent of grain, touch of vinous nature, and some tartness. Light bodied, with fair carbonation, the taste followed similarly, adding a rind-like, and slightly tannic bitterness, with a dry finish. Somewhat interesting, but not wowed.

375ml bottle pours a murky orange color with a short lasting fizzy white head that leaves no lacing behind. Aroma is orange zest with some white wine barrel notes finishing with some funk. Taste is an orange zesty tartness with some spice from the grains and a light fruity and malty sweetness and funky yeast finish. Light to medium bodied with moderate carbonation. Overall, quite a complex brew for the style, but something seems to be missing for complete satisfaction, and I cant quite place it.

Pours a fizzy honey golden with no head. The musty barnyard aroma leaps out at you as soon as the bottle is open. Some sweet citrus, hay, and oak, too. Full bodied with a sharp but restrained carbonation level. Flavor has the musty barnyard notes followed by sweet citrus, lavender, proseco, and floral. Tart throughout. Ends rather dry. Definitely beat my expectations.

hazy gold pour slight white head. aroma lavender, sage, slight pumpkin it works. Tastes complex grains, lemon, dusty brett, semi sweet.
