COMMERCIAL DESCRIPTION
The malt bill of this late 1800’s inspired Belgian ale consists of a combination of barley, oats, wheat, rye and spelt. For the fermentation we use a blend of Saison yeast with three older Brettanomyces strains. This beer aged on lavender French oak Chardonnay barrels. 6.5% ABV; pH 5.2; rare.

GABF 2012. Jesus Christ, I think I drank a full bottle over the first two nights of GABF. I believe that I had about twenty pours and to be perfectly honest, I was chugging this shit near closing both nights. Maybe it’s just me, but Trinity’s Saison Provisional and this are simply world-class.

Pours a cloudy yellow orange appearance with a white head. Tons of funk, spices, light bretty pineapple, and a ton of lavender. The floral element is just beautiful in the flavor and the nose. Beyond the floral element which is pretty strong, is a soft bretty tartness, citrus, light rye, and moderate spiciness. Finishes a bit spicy, floral, and slightly tart. An absolute delight. Despite the high price, I fully intend on picking up a couple bottles for a special occasion. FUCK YEAH.

Light orange pour, fluffy white head. Aroma is tart and loaded with floral lavendar. Flavor is wonderufl. Yeasty, tart, lavendar, wheat, good acidic backbone, but so soft on the palate. Wow. Great brew!

Bottle courtesy of Andy/Puzzl. Pours a deep hazy orange body with thin white lacing. Aroma is fresh, funky Brett, beautifully complex floral notes and light spice. Mouthfeel is fluffy, nearly perfect with notes of Brett, flowers and sweet funky fluffy fruit. Awesome saison.

Bottle with a big thanks to adnielsen !! Pours a rich golden almost copper color with a thick tight foam. Aromas are big and complex... barnyard, rustic earth grain, citrus, lavender and some yeasty spice. The palate follows the nose but all the overwhelming aromas fall in line nicely with a layered yet balanced drinking experience. Nice grain bill holds up to all the accents and nuances caused by all the strange additions ! A pleasure to drink and a big thanks for sharing !

Bottle. Moderate to heavy bread and straw for the malt, moderate lemon and grass for the hops, heavy barnyard and faint basement for the yeast, with proseco, unripe peach, vinegar and wood in the background. Head is small, frothy, white with some slippery spots of lacing and is almost fully diminishing. Color is murky medium amber. Flavor starts slightly sweet and moderately acidic, and finishes the same. Palate is light to medium, slick with a lively carbonation. Excellent Saison with a touch of sweet fruitiness to balance the tart wildness.

Bottle at home. Pour is hazy golden-color with a big, fluffy white head and decent lacing. Huge lavender, coriander, light spice, tropical fruits, mango, pineapple, brett, biscuit, grass, straw, a touch of lacto, and vanilla in the aroma. Taste is tangy, spritzy, huge lavendar, citrusy, lemon peel, light biscuit, straw, grass, and big flowers with a lightly spicy finish. Medium mouthfeel with high carbonation. Really nice floral saison with a huge lavendar and vanilla presence. I could see how this one may offend people, but I kind-of dig it and it’s great to see a brewer making a sessionable saison.

At private tasting last June. Labeled 4.8% bottle 816, barrel 71313-613. Light gold color. Aroma of sour fruit, bitter fruit. Flavors of rye, wheat, pumpkin, lavender and spices. Overall very flavorful with big lavender and some ginger.

Aroma of oak, tropical fruit, tartness slight funk. Taste is the same but brings out the lavender as well. Slightly sweet tart finish. Well balanced, very complex and all around quite a good beer. Less funky than saison man and has a slight lactic tart finish to it, which is quite nice. Subtle sourness but nice. Really like this as I drink it. Poured from a vintage 2013 750 ml bottle. Aroma is citrus forward with some light pineapple as well. Moderate lavender notes. Some light oak and white wine characteristics. Light grain notes with hints of honey. Some light pear and stone fruit as well. Pours a slightly hazy, yellow gold with a small, thin, white head that recedes quickly to the edges and disappears. No lacing or legs. Flavor has a medium light acidity, slightly sharp, with a medium light, balanced sweetness. Light grain and honey notes. Fairly fruity with citrus, tropical fruit, pineapple, melon, pear and stone fruit.Some light oak and white wine notes. Medium light lavender. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a nice saison. Nice fruity notes that are well complimented by the white wine barrels and lavender. The acidity is present, but soft and mellow.
