What is this crazy shit? A 4.5% saison with spelt and Brett and pumpkin and spice? Sounds like a disaster in the making. And yet... bright yellow pour with one finger of rocky white head. Nose shows lemongrass, a garden herb blend, lavender, and some lemony citrus. Taste adds a peppery element and a tartness. Dry and refreshing. Hell yeah. Thanks, Ethan.
Bottle, shared with Parksy and Doug. Very hazy light amber with a highly carbonated head. Quite a beguiling beer all around. Very funky, with dry leathery Brett character, but also very vinous, with prominent white wine character-- but here’s where it gets interesting: also very spicy, in an unorthodox sense for this brew. Aroma is citrus forward with some light pineapple as well. Moderate lavender notes. Some light oak and white wine characteristics. Light grain notes with hints of honey. Some light pear and stone fruit as well.
Pours a slightly hazy, yellow gold with a small, thin, white head that recedes quickly to the edges and disappears. No lacing or legs.
Flavor has a medium light acidity, slightly sharp, with a medium light, balanced sweetness. Light grain and honey notes. Fairly fruity with citrus, tropical fruit, pineapple, melon, pear and stone fruit.Some light oak and white wine notes. Medium light lavender.
Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth.

Pours a hazy golden with a white rim that leaves low lacing. Nose is pretty oak/wine-forward but you also get some (cheesy) funk. Taste is more wine, flowers and grapes (Kool-Aid-ish). Body and carbonation are moderate, mouthfeel certainly vinous. Overall a nice winey saison, not the most polished but I still enjoyed it nicely. Bottle (375 ml), shared. Clear pale golden with a small white head leaving no lacing. Aroma is of chardonnay/fruity notes, lavender, rye spiciness and Saison yeast. Taste is fruity with chardonnay notes, lavender, rye spiciness, brettanomyces and peppery notes. Light to medium body. Moderate carbonation. Fruity and lavender finish. Good perfumy saison with nice complexity and drinkability.

375ml bottle. Pours a cloudy pale yellow-orange with yeast particles floating around
and a small, fizzy, short lived, white head that leaves spotty lacing. Sweet, fruity aroma of orange, lemon, lavender, white wine, brett and oak. Sweet, complex flavour of wheat malt, rye, lavender, lemon, brett, white wine, spice and oak with a dry, tart, slightly acidic finish. Shared 12.7 oz. bottle poured to a snifter displaying a hazed straw color, with head foam that broke down almost immediately to a light, bubbly ring, and a few, translucent spots of lacing. The nose was subtle, yeasty funk, faint floral expression, with a light scent of grain, touch of vinous nature, and some tartness. Light bodied, with fair carbonation, the taste followed similarly, adding a rind-like, and slightly tannic bitterness, with a dry finish. 375ml bottle pours a murky orange color with a short lasting fizzy white head that leaves no lacing behind. Aroma is orange zest with some white wine barrel notes finishing with some funk. Taste is an orange zesty tartness with some spice from the grains and a light fruity and malty sweetness and funky yeast finish. Light to medium bodied with moderate carbonation. Pours a fizzy honey golden with no head. The musty barnyard aroma leaps out at you as soon as the bottle is open. Some sweet citrus, hay, and oak, too. Full bodied with a sharp but restrained carbonation level. Flavor has the musty barnyard notes followed by sweet citrus, lavender, proseco, and floral. Tart throughout. Ends rather dry. Definitely beat my expectations.
