COMMERCIAL DESCRIPTION
IPA Primitif– Ever had an extremely hoppy sour beer before (sour, as in Lacto… Bretta does not create sour flavors)… The answer is NO! You have never had a super hopped sour beer, because the microbes that make the ’cheek puckering sour’ are extremely sensitive to hops! We’ve figured out a method to get around these sensitivities and developed a 100 IBU brew fermented with Lacto and Bretta, aged in barrels, and then dry hopped.

This Third installment in our Office Space themed ’Case of the Mondays Series,’ uses a unique double fermentation (warm with Lactobacillus delbrueckii in the kettle then cool with a special Bretta). This sour/wild beer is extremely hoppy, barrel aged, and dry hopped. Focus of this beer is decidedly fruit (think ruby red grapefruit), from the choice to use mosaic hops, citra hops, Amarillo, coriander, and tangerine zest. Pours gold with a white head. Aroma is citrus, brett, earthy and more citrus. Taste is tart, sour and sweet. Light bodied, thin texture, crisp and dry finish. Excellent.

Bottle from Broken Top Bottle Shop. Murky amber, orange, head subsides to small ring. Tons of sediment. Tart aroma, stone fruit. Yes, this said IPA on the label. Taste, while still fruity, also has some of the malt and hop character of an IPA. Oh, there it is. Still pretty damn sour though. Sweet and tart finish.

Bottle at En Trappa Upp in Örebro. Tart and funky smell with citrus and cellar notes. Similar taste. Nice and strong tartness. Not sure where the IPA part fits in, felt more like a guezue. But very nice!

Hazy golden color. The aroma is wonderful, it marries the character of the brett with a strong fruity, zesty component; it’s citrusy, and a bit trropical, pungent. The mouthfeel is very dry, but quite smooth thanks to the high carbonation; the flavor is zesty, citrusy, funky, and rather astringent in the final; plenty of grapefruit, qumquats, and hints of passion fruit.
Wonderful fruity sour.

12.7 Oz bottle. Porus a hazy amber with huge head. Aromas of breadfruit, mashed pineapple, limes, and toasted malts. A fruit bomb with flavors of sour tropical fruit, green berries, pommegranate and mangos, limes, and a little sweet malts,. If hops are present it’s the Ammarillo. Incredible. Though not an IPA by any means...

375ml bottle from Park Royal (thx, Jamey!). Pours a cloudy pale golden with a white head. Aroma is funky, sour, citrusy, fruity with bretts notes. Taste is fruity, sour, citrusy. Very good.

Pours golden color with a small head. Aroma is sour with lemon and apricot, mild earthiness. Flavor is apricot and citrus, some yeast and spices. Decent but not quite what I was expecting.

Aroma has strong bretta tartness and fruit candy in the background. Flavour has tart citron, grapefruit, bretta tones and hints of cereal-style malt. Also mild gastric acid tones. A bit too tart to be completely enjoyable. Indeed no signs of 100 IBU, sourness overrides it I guess.
