COMMERCIAL DESCRIPTION
A ’Co-Loveration’ celebration between two brewers inspired by their mutual sincerity for Saisons, wild yeasts and an artisanal approach with unique ingredients. Inspired by tasting creatively designed drinks together during an epic ’FOBAB’ trip to Chicago, this Saison features a ridiculous amount of rare yuzu fruit, grains of paradise, and fruity shiso herb. A 100% Brettanomyces Saison, we showcase naardenensis and farmhouse as our yeast choices. Aged in Chardonnay barrels, this beer develops a soft vanilla maturity along with a tannic and oaky dry finish. The two ’savant’ Saison brewers, 7venth Sun and Trinity Brewing, have gone past the point of ’reality’ with this recipe and into a realm of surrealistic insanity.

Hazy light golden colored with a bubbly and rocky white head, giving a bright dusty apricot fruity brettanomyces funk aroma. Crisp fruity apricot and gentle mango juicy tartness on the flavor with a brisk bretta funk and saison grainy peppery tone underneath. Dusty and funky bretty but bright tart fruity flavors play nicely on the complex flavor profile.

Bottle thanks to Brian. Pours a cloudy yellow with medium white head that lasts. The aroma is funk, yeast, lemon zest, oak. Medium body, similar flavors to nose, very dry, good.

The Sampler, Brooklyn bottle: pours pale gold with a white head. Aroma is lightly funky with the pale malts and hints of flowers and fruits. Taste is very mellow. Not really dry or sweet. Pretty good and this was a pretty old bottle.

Bottle. Moderate to heavy hay and straw for the malt, moderate grass and lemon peel for the hops, heavy dank and musty for the yeast, with wood, white wine and crab apple in the background. Head is average sized, frothy, white with good lacing and is mostly diminishing. Color is hazy amber/yellow. Flavor starts faintly sweet and lightly to moderately acidic, then finishes lightly to moderately acidic, a touch sour and a light bitterness that lingers in the back of the mouth. Palate is light to medium, slick, with a soft to lively carbonation. An excellent and nicely complex Saison verging towards a Sour.

Bottle. Hazy yellow gold color with a medium white head that slowly recedes to a film. The aroma is strong and spicy with hay, thyme, pepper, lemon zest and a hint of barnyard funk. The taste mirrors the aroma with lots of complex spicy hay backed by some tart lemons and a bit of astringent wood. The palate is medium. Finished long and lightly tart. Overall: Best Saison I’ve tasted in a long time.

Bottle from June 2015. Brett has really taken hold in the nose, adding a whole bunch of slightly catty funk to lemon peel, mint, oak and lychee. Flavor has a citric tang from start to finish, while green apple skin, buttery oak and pineapple swirl mid-palate before a mostly dry, semi-tart finish.

Refrigerated 12.68 oz. brown bottle poured. Hazy pale golden with small white head. Aroma is tart lemon, medium body, medium carbonation, and pretty good lacing. Taste is yeasty, and some funk.

Liked the 7venth Sun version, this was maybe a slight bit more tart .. . cereal, hay, sour hay, and trinity yeast .. medium feel, excellent humming finish .. quite nice, i insist .. . . That sounds sketchy.

Pours a pale gold with white head. Light body. Oaky, floral, spices, slightly sour and citrus, and sweet fruits. More sour than most saisons which i enjoy and heavy fruit flavors.

floral, citrus, earthy, vanilla, hay, bread, golden, orange, hazy, medium sourness, long finish. tons of citrus and earth character. cool beer. So glad I got to try it.
