Moderate malt flavors, very nutty. Hops are heavy, flowery and purfumed - resinous, grapefruit and pine flavors. Moderately yeasty - very spice driven. Banana grape and apple - very fruity and sweet. Nutmeg and clove make an appearance. small off white head is mostly diminishing. Medium amber, orange red hues. Moderately sweet, heavily acidic, and slightly bitter. Well balanced and a bit acetic. 06.16.05 Tap at New Hope. Absolutely beautiful pour, dark straw, opaque in its haze, with a tall creamy head which slowy fades in rocky irregularity. Sheeting lace. Delicious, juicy aromas of pear juice, weedy coriander. Light to medium bodied that seems to fill out as it come sup to temp. Served too cold for my liking, so I had to let it sit for a while. It’s a tart beer, fruity, good yeastiness is both spicy and ripe. The yeast reminds me of the recent Triumph abbey tripel. Wow! what a delicious and refreshing quaffer for summertime. I’ve got to give props to Triumph for being the only brewpub in NJ to consistently try new styles and do it well at that. What other BP in the state right now has on an Impy Stout, Saison, Gruit, and Vienna besides the usual amber, IPA, and wheat? Awesome. Back to the beer...hints of lemongrass and this is indeed reminiscent of a witbier, only more tart and yeasty. I would have liked a drier finish, but the solid tart bite cleans it all up. Hand-bottle courtesy of Dickinsonbeer, sampled in November of 2006: Pours a hazy copper with a wispy-lacing off-white head. Complex earthy floral peppery spiced aroma has a good sweet biscuity malty presence. Body starts sweet and full with a floral hop flavor and bitter earthy balance with lots of bready yeast. Draft at the Princeton location during the fireworks run. Poured a slightly cloudy burnt orange body with a foamy off white head that quickly faded. Aroma is spicy, menthol, toast, grains, yeast, citrus rind. Medium body with average carbonation and a lingering aftertaste. Flavor is similar to the aroma with lots of spicy esters up front, yeast and grains, bubble gum and rotting citrus fruit. On draft at the Chestnut Street location. Pours a hazy golden caramel with a medium white head. Aroma of peppery hops Taste is peppery with tangy citrus undertones.

Draught in Philly location: This one pours a surprisingly darker color than a typical saison. It was a clear, darker amber color. There was also a fair amount of an off-white head on it that left some lacing. It had a lighter peppery, wheat and malty aroma. This has a very nice taste. Some clove and peppery notes, a slight malt sweetness, faint fruits. A nice brew.
