Revisiting Scratch #3, we take the same Tripel recipe, add beet and cane sugars to the kettle, and run the wort through our hopback brimming with juniper berries, coriander and yarrow flowers.

Inspired by the herbaceous nose of gin, the berries and flowers give a slight pine/citrus aroma with floral undertones. Scratch #8 has a dry, yeasty finish and noticeable alcohol warming when consumed.

12 oz bottle thanks to Dickinsonbeer, thanks buddy. Pours a very hazy golden/orange with a small to average size white frothy head. Spicey peppery aroma, so spicey it has almost a mint effect...some coriander, sugar and floral notes as well. Average to thin bodied with strong carbonation. Flavor is actually a step down from the aroma and dominated by white pepper, coriander, grain and fruit rind. I think this beer has just a little too much going on, sort of like paying for a blindfolded, handcuffed to the bed around the world with the super bonus ending.

Pours yellow/gold. Aroma is mostly spices. Flavor is also spice dominated, with some malt, sugar, and oranges in there too. A very wild and interesting beer.

UPDATED: DEC 29, 2008 North Raleigh Tasting! Pours is golden blond with a fizzy white head. Orange and coriander on the nose. I taste the spiciness from the juniper berries up front and the flowers on the finish. Very interesting beer.

Pale blonde pour with continuous bubbles... Not much of a flavor from the additives(juniper berries etc...)... Seems as though it didnt ferment enough given the excess sugars... Kind of like putting too much suger in your cheerios when you were a kid... More fun to try than good to drink...

Pours a pale golden/blond color with a foamy, white head. The foam settles to a wispy film, leaving minimal sudsy, spotty lacing behind. The nose is very uniquely spiced. Clearly based on an Abbey Tripel, the background shows pale caramelized malts, bready yeast, bananas, spicy floral hops, and creamy sugars. The spicing is where this one turns funky, showing big notes of ginger, coriander, cinnamon, clove, juniper, and even mint. There is alot going on in the nose, and it somehow all comes together quite nicely. Flavors are very spicy, showing gingerbread topped with banana’s foster. Pale malts provide a steady background for the dessert-like flavors, while fresh ginger, cinnamon, and juniper add serious kick. Definitely doesn’t feel like 10%. Medium-full bodied and somewhat syrupy. Sits heavy on the stomach from all the sugar. Finishes with lingering spice. Very yeasty. Overall, pretty solid for the S/H/V category, but ultimately too sweet and spicy for me.

Bottle from acrdz. A nice looking orange colored. Hazy with little head. Aroma of spicy yeast, orange, an actual floral boquet, an also a good amount of juniper. Nice flavors of fruit, banana, orange, juniper, yeast, spice. Alcohol is well hidden. It’s pretty decent.

Thanks to DIM For this one Bottle poured into my Duvel tulip produced a good finger worth of white head that turns to lace quickly. The body of this brew was clear and golden yellow Aromas of Belgian yeast (bubblegum) and spices with a light whiff of floral hops fill the nose as it warms some the fruitiness comes out. Flavors of banana, sweet malts and spices are present up front; it gets a bit peppery as it warms in the glass. The alcohol was hidden well would not have guessed it was 10% Medium mouthfeel I would have liked a little more carbonation on this one It’s a good American attempt at a triple, not a disappointing attempt but still not one of my favorites of this style

Poured clear golden - almost like a fine pils. Aroma was herbal. Wit was our best guess at the style. Flavor was medicinal and herbacious. Got dumped down the drain.

Aroma is spicy, obviously, but damn, this smells dry, yeasty- like a Wit pissed out by Barry Bond. Wait, that sound kinda gay that I am even saying that. Maybe it just has a lot of B-12. HAHA. Anyway, the taste is sweet spice, heavy juniper and coriander. This is pretty damn good. I am going against the grain on this. Drinks like a 7 percent beer, no 10 here.
