Revisiting Scratch #3, we take the same Tripel recipe, add beet and cane sugars to the kettle, and run the wort through our hopback brimming with juniper berries, coriander and yarrow flowers.

Inspired by the herbaceous nose of gin, the berries and flowers give a slight pine/citrus aroma with floral undertones. Scratch #8 has a dry, yeasty finish and noticeable alcohol warming when consumed.

Bottled. A hazy amber beer with a thin off-white head. The aroma is sweet malty with fruity notes of peaches. The flavor is sweet malty with notes of fruit - again peaches being stronges, but also notes of ginger. Thanks Storm for sharing.

(Bottle 35,5 cl) Courtesy of Storm. Hazy yellow with tiny floating impurities and a small white head. Very sweetish spicy and floral aroma. Medium body, a little low in carbonation with plenty of coriander and floral notes. Almost no bitterness. 201008

Blonde with a slight haze. Herbal, juniper nose...not much malts. Fruity juniper berry character with only a hint of malt. You’d NEVER know they ran it through a hopback full of juniper berries. Good flavour - I do like juniper. But it could do with a bit more malt.

Bottle thanks to Victor at Paul’s. Pours gold. White head. Nose of beets and candi sugar. Taste starts off with cinnamon and nutmeg and gives way to the cane sugar and beets. Some lemongrassy textures as well. Medium body.

A: The beer pours a pale, cloudy golden orange color with a small white head.

S: Lots of really sweet malt and sugar with a little bit of orange peel. A light spiciness, clove and coriander for the most part, and yeast. Some bread, but mostly sugary sweetness.

T: Like with the nose, big time sugar flavor/sweetness. A bit of the juniper comes through, but there is plenty of spice and yeast. Some bread and a bit of alcohol come through.

M: Light to medium in body with medium carbonation.

O: The alcohol flavor is a bit off-putting, but pretty good overall.

(12oz bottle, thanks mj) Small off-white head atop hazy apple juice body. Aroma is moderately sweet, bubblegum, straw, some orange, honey. Taste is moderately sweet, bubblegum, orange, alcohol, light berry. Some alcohol burn. Sticky medium-full body.

12-oz bottle received via Secret Santa July 2008. Pours hazy orange with a small, fizzy, white head, mostly diminishing with spare lacing. Aroma is heavy malt (bread, straw, meal), average hops (flowers, herbs, grass), heavy yeast (horse blanket, barnyard) with notes of banana, pear, apple, and wood. Full bodied, sticky and gritty texture, lively carbonation, and a bitter finish. Long duration, light sweetness, moderate acidity and bitterness.

(Bottle) Pours a clear yellow body with a small white head. Aroma is dominated by yarrow and ginger becoming more fragrant as it warms with notes of orange peel, banana, light coriander, juniper, and perfume. The flavor carries much from the aroma with the yarrow and ginger then leading deeper with cinnamon, light citrus, juniper, and nutmeg. Enjoyable!

Nice experiment with the yarrow, which in my opinion turned out much better than Fluxus. Would not be surprised to see more experimentation of yarrow as a substitute for hops in Belgian influenced beers.

Bottle at Victor’s bracket box tasting at Paul’s. Pours a hazed golden amber with a thin white head. Softly spicy and herbal, candy malt. Sweet, malty and lemony. Sweet, lemongrass and candy. Interesting.
