COMMERCIAL DESCRIPTION
Née de la rencontre fortuite d’une stout forte et d’une fermentation d’abricots du Valais qui jamais n’atteignit l’alambic du distillateur auquel elle était destinée, notre Oud Bruin (flamand pour "vieille brune") est une interprétation assez peu orthodoxe de ses cousines belges.
Elle en garde cependant le délicat équilibre aigre-doux, entre une solide ossature maltée assise sur des malts, aux notes caramélisées, chocolatées, rôties et fruitées, dans laquelle vient se fondre le vin d’abricot avec son acidité lactique, ses notes de cuir et d’étable liées aux levures sauvages, et une discrète note d’abricot.
La finale est légèrement amère et le tout se déroule tout en harmonie sur le palais.
Une bière unique, d’une grande buvabilité mais joliment complexe, entre douceur, fruité et acidité. Elle se mariera avec l’agneau, le canard, les moules, les crustacés ou des fromages à pâte molle ou mi-dure.
Série limitée de 1.200 bouteilles de 75cl, 7.2% d’alcool/volume, 35 unités internationales d’amertume (IBU).

Sour throughout this beer from the aroma to the last sip. Fruity sour aroma with some cherries. The flavor is sour too with fruit. Nice and dry.

Draft at Redlight Redlight the night before RBWG 2015 listed as Grand Dame. Murky brown with off-white head. Aromas of vinegar, tart fruit. Tastes of vinegar, tart dark fruit, cherries. Medium-light body with a dry finish.

Hazy to cloudy brown color, small yellow to tan head. Light acidic to lactic, apricots fruity, a bit sweet scent. Acidic dry, tart, red currants, berry peel/skin taste. Medium mouthfeel to fizzy, very low bitterness. Some apricots taste as well. Tart, fruity aftertaste.

June 20th, 2013 - My tasting notes for Trois Dame’s Oud Bruin (formerly known as Grand Dame) are based on a short sip from a friend’s glass, but I can tell even from that small sample that this is a sweet and oaky sour. More nuance requires more beer, which my friend was not having, but I did notice some clean strawberry notes, and enough sourness to be pronounced, but not enough to collapse the mouth in flesh-rending acidity.

Bottle @ Gnoff. Pours hazy reddish brown with a frothy brownish beige head that leaves some sparse trace on the glass while dissipating. Smell is smell is malty and fruity with dark bread, caramel, lemon juice, apricots, grape juice, moist wood, hay, soil and lemon zest. Taste is sour, salty, slightly malty and fruity with dark bread, lemon juice, apricots, apple cider vinegar, white grapes, moist wood, hay, soil, minerals and lemon zest. Mouthfeel is slightly sharp, dry, tart and medium bodied. Finish is sour with dark bread, lemon juice, apricots, apple cider vinegar, moist wood, dry soil, minerals and lemon zest. Nice citric acid centred apricot sour.

Grand Dame - oud bruin Belle exemple d’une fausse oud burin. On retrouve certains éléments tel que l’acidité acétique mais elle manque de complexité par rapport à une goudenband ou même une duchesse de bourgogne. il existe désormais plusieurs cuvées de la "Grande Dame"

Disclaimer: grand same (oid bruin with abricots) Smells sour with some fruity notes (the lable suggests abricots, but I am not very good at distinguishing fruits) The description as a sour brown is very accurate with an additional emphasis on sour.
