The basis for Sainte ni Touche is La Pasionaria Double IPA, a strong beer with a light sweetness balanced by an abundance of bittering and aromatic hops. After fermentation, the beer is transferred into used Chardonnay barrels. The barrel aging reduces the bitterness and covers the high alcohol content. The beer simultaneously becomes a bit lighter and more sour, making it more refreshing. We’ve called it Sainte ni Touche (Untouchable Saint) because the beer hides its real character. It’s only after tasting that one discovers that it’s not at all what one was led to expect.

On tap at Oxbow Portland. Pours a softly hazed amber with a medium sized white head. Toast, wood, acid, vinegar, balsamic. Medium bodied, wood, spicy citrus and lemon, a hint of cherry and nutty acetone with some buttery popcorn. Butter, malt, wood. Tangy with some nice acidity into the finish, long and malty with vinegar tones, bright acid, a bit of lemon, nutty and buttery. Tasty enough, and on the plus side, as a 9% beer, the ABV is well hidden.

Bue en bouteille de 33cl à la maison Couleur blonde, pas de mousse ni d’effervescence Nez sur l’acide EN bouche assez bien équilibrée sur l’acide et l’amer fin de bouche sur le fruit jaune avec un côté gueuze. Très bon.

Tap at Erzbierschof Zurich. Chardonnay galore. If you like that, you will be pleased. Lots of barrel, sour, wine, grapes. A bit pinching, a bit boozy. Could be more balanced. And no, I really wouldn’t have guessed that La Passionara is the base beer for this...

330ml bottle served in a snifter glass. Pours a cloudy yellow to orange color forming a medium and soapy white head that forms tons of lingering soapy lacings in the glass. Nose is very fruity and woody with a strong pale malts backbone. Strong notes of grapes, mainly. Apple vinegar, orange zest, leather and wild yeasts. Hints of grassy and citrus hops. Slightly sweet upfront that becomes quickly sour and funky but not extremely. Good sweet-sour balance. Again, strong notes of white grapes, oak, apple vinegar, orange zest, leather and wild yeasts. Full body. Medium to low carbonation. Hidden alcohol. Very fruity and persistent aftertaste. Strong notes of grapes. Great drinkability. Good Wild Ale made from a IIPA :)

Clear orange color with foam layer. Light fresh sour nose. Sweet sublayer with an overlaying sour (grapy) fruity touch. Calm and sour aftertaste with a milky mouth feeling.

Tap. Orange color with white head. Aroma is wild yeast, sweet cherry. Taste is sweet, fruity, wild yeasts, quite bittersweet in the back. Medium carbonation, nice.

According to the importer Shelton Bros, this is a saison and thereby it seems to fit that style much better. Aroma is a yeasty tart. Appearance is at first a gusher, then a large head, before settle to a hazy effervescent amber. Flavor is like nose plus fruit and hints of oak. Great body. No sign of alcohol. Drinkable.

Hazy golden color, no head. The mouthfeel is a bit oily (expected with strong Sours), and it has a lingering vinegar note; there seem to be a tiny amount of residual sugar, and a shade of wood; mild sourness, and light fruity touch; lightly astringent in the end.
