COMMERCIAL DESCRIPTION
Le SAGARNO (littéralement vin de pomme) de Txopinondo est une boisson fermentée à base de pomme, élevée sur lie en fût pendant un minimum de 6 mois, rafraîchissante et fruitée, à déguster bien fraîche (env. 12°C) avec des grillades de poisson ou de viande. Nous le produisons selon une méthode artisanale ancestrale à partir de pommes du terroir et d’ailleurs.

75cl bottle from the Sunday market in Amboise, Loire. Shook bottle before opening, as advised, and did seem to bring a bit of life to it. Hazy gold appearance, very short lasting bubbles atop. Sour apples welcome you in the aroma. Taste is typically old-style Spanish / Basque with a super tangy, complex, sour character with distinct vinegary notes. Quite a cocky fellow with sharp apple fruits, green apple and a certain under-ripe tart edge. Great for the style.

Bottle sampled at RBSG. The cider is a hazy yellow with a fizzy white head that dissipates quickly. The aroma is dry, floral, and musky. The taste lends a tart apple character to it. Medium body and medium carbonation. Interesting cider.

Sampled at Basque Market during RBSG 2-17. Pours a cloudy gold with a small whitee head. Nose is wood,. with tart apple. Medium body. Favor is quite funky and there is a dry apple finish. Nice.

Bottle at Redlight. Hazy golden. Smells of green apples, funky, very acidic. A bit of acetic acid. Tastes of sour apples up front. Not even granny smith. Very sour apples. Vinegar sourness throughout. Not my favorite profile. Tingly sour apple flavor in the finish. Flat, of course. Fascinating but not something I’d really go for again.

Bottle - Funky, lemon and some nice apple. Clear hay and no head. Horse blanket, light lemon and some nice acidity. Apple is there, but not in your face and the sweetness comes out in the long finish. Nice.

On tap at Himkok, april 16th 2016. Hazy yellow body, minimal white head. Arima is funky with apples and herbs. Taste is tart and dry, apples, with a mild funk finish. Good lasting sour apple aftertaste. Nice.

Keg @ Palais de La Biere, Lyon. Hazy gold with no head. Musty, earthy nose. Mellow Apple and plenty of funk. Dank basement. Some pissy straw. Flavor is similar. Crisp apple skin. Mildly tart. A touch of clean acid on the finish. A bit of dirt. Medium body, soft carb. Excellent.
