Aroma is amazing. From a distance it's all apple. Up close, it's yeasty and apply. Color is a nice murky yellow with a fluffy white head. This is essentially Fin du Monde with an apple layer to it. thehoff (598) - Grand Rapids, Michigan, USA - DEC 29, 2003
Beautiful pale white gold color. Cloudy and bubbly. Frothy white head, about half an inch. Smells like a Unibroue beer. Apple and orange citrus smell. Odd flavor. Tart apple finish. Very smooth and quite nice. Candy, like sweet tarts or something. Nice beer. I expected a more potent flavor but it is really nice and subtle. Great mixture. dirtymike (2016) - Manchester, New Hampshire, USA - DEC 26, 2003
Golden color wqith slight haze.Aroma of sour/tart appples.Carbonation was prickly on palate.Fruity and zesty.Refreshing. y0cola (361) - fremont, California, USA - DEC 19, 2003
I think this was a bad bottle or something. I just pulled the cork out; it didn't pop at all. Strong cork taste with very slight hints of apple and lots of carbonation. Jedsbrew (465) - Rhineland, Missouri, USA - DEC 12, 2003
Medium gold color with a fine bubbly head and loads of carbonation. Very aromatic, I could wiff it before even picking up the glass-sour apples, cherries, bubblegum and lemon drops came to mind. Light to medium body with a mouthfeel that seemed a little flat in spite of all the carbonation. Apple and citrus flavors, orange and lemon with a background maltiness that got blander as it went along, and a finish that reminded me of used chewing gum. This one didn't convince me at all but it does have an awesome aroma.

Very nice, refreshing beer. Definitely not a Winter Brew but I had heard so many great things about it, I decided to give it a shot. Thick, fluffy-white head lifts up a wonderful nose of fruit (heavy on apples and corianer of course). Palate is very soft with just a tweek of fruity-sourness. Nice cloudy/deep yellow color as well. The aroma of apples really wasnt there. The head was large and lacey.
The color was a murky gold. I hate apples, but this had just the slightest taste of apples in it. I think this is a great finishing beer to a fine winters meal. ukoolaid (580) - Amherst, Massachusetts, USA - DEC 6, 2003
Bottle. Light golden color with decent size white head. Aroma of apple cider. Tastes extremely appley and a bit sweet. Not my cup of tea. Boutip (6483) - Gatineau, Quebec, CANADA - DEC 6, 2003
Bottle: It pourred a light brew with a faint smell of cider. Huge head with good retention skill. Lot of carbonnation and the usual wheat taste from Unibroue. The spice and apple aroma are too faint and therefore this probably my least favorite from the Ephemere series. I did notice that it is better when drank warm. The sour taste of apple is accentuated. Note: I once drank this on tap and it was way better but can't find it on tap anywhere now. boto (2261) - Granby, Connecticut, USA - DEC 5, 2003
Bottle: A very interesting beer. It pours a hazy yellow color with a huge, frothy white head. Sour apples to the nose, as well as some spiciness. The taste is of apple, a bit of wheat, some breadiness, a hair sweet to the taste as well as the sour apple taste. An interesting change of pace, but I couldn't drink many at one time.
