COMMERCIAL DESCRIPTION
The persimmons were provided by Aaron Persinger, a local singer/songwriter who is currently the drummer for Rev. Peyton’s Big Damn Band. (The Rev himself is a certified Persimmon lover I’ve been told, can’t wait to get him a bottle). Being a classic Indiana fruit, we couldn’t resist, maybe one day we’ll find enough local mulberries and bring another (as far as we know) first-ever fruit lambic-style to the lineup.

Sample at first sunday. High on the tart quotient. Reminds me of kiwi a bit with a little muted and more tropical fruit flavor thanks to the persimmon.

750 ml bottle, Batch 3.10, Bottled 2/25/14. Brought this to a pizza place that is BYOB. Pours a hazy yellowish color without much head or lace. Fruity aroma that gets fairly sour. Taste is puckeringly sour. Wow, didn’t expect that much sourness here. Too much for me. Lacks balance, just a sour bomb. Vinegar fans will probably love it though.

750. Not sure the vintage but at least a couple years old. Pours a cloudy pale gold with no head or lace. Soft clear tree fruit nose. Creamy medium body with soft carb. Clear balanced tree fruit mid palate with nice dry edges and no bite. Dances. Beauty. Age has been kind.

Pour at the Great Taste of the Midwest. Hazy light yellow pour - spicy taste with a nice funk and light sourness. Interesting and fun.

7 Aug 2015, bottle. pale yellow/white, and hazy. nose is funky, cobwebs. can’t say i would even know what a persimmon smells or tastes like, but this has fruit peel tartness. Thin body and moderately fizzy. very dry, tart, white citrus fruit tartness. very nice!

aroma was great, fruity, apple and berries, but holy vinegar bomb, i dont feel like drinking salad dressing. Ah!!!!

From a bottle at the Wicked Weed Funk Asheville Fest 2015. Pours a hazy pale gold with an off white head. Fruity nose. Intensely sour finish.

From old tasting notes. 750 ml bottle. This one pours a lightly hazy peach color and crowned by a small head of white foam that slowly settles to a thin film. The aroma shows notes of persimmon and light stone fruit along with some barnyard funk and sourness. The flavor follows with more of the stone fruit and persimmon to go with some lactic sourness and a touch of bitterness on the back end. Medium bodied with balanced carbonation that leads to a fruit forward finish. Pretty good stuff. I would like to try a more recent batch as this one of the first batches released.

Pours a flat hazy orange golden color with no head. Nose is acetic with glimpses of tropical guava and citrus. Palate is pure vinegar with absolutely no redeeming qualities. throat burning, bile and vile.
