Bottle: The aroma consists of lemon peel, must, citrus, apple, sweet tarts, and faint wine. It pours a slightly hazy dull gold with a small white head that quickly fades to a minimal film outlined b a thin ring. The flavor starts with a quick dose of apple and light citrus. The finish has light lemon, lemon peel, light must, and faint vinous notes. It’s light bodied with moderate carbonation.
UPDATED: MAY 11, 2015 Bottle: 40 of 58. Very light, cloudy pale straw body with a sudsy, soapy white head that settles quickly to a small film. Pretty funky aroma, lots of cheese rind, sweaty feet, even some mild diaper. Yogurt, stone fruit, hay, & some strong white wine notes towards the back-end. Flavor is a little more mild; mineral water, stone fruit, though not as tart as you’d expect. Some soft wheat, a touch of must, cotton. very faint wood, & a small kiss of white grape. In short: A doughy wheaty beer with a lot of white wine barrels. Surprisingly good.

How: Bottle 750ml, bottle #15 of 58. Consumed fresh 2 months after first rating, bottle sent to me by mcberko, thanks a lot Matt.
The look: Yellow body topped by a large white head with low retention. Crystal clear body first half of the bottle but then partly cloudy.
In long: Nose is unmistakably soaked white wine barrels along with wet dog, some fresh bananas, sports locker, phenols. A fun aroma that is far from ‘clean’. Taste is cleaner than the nose, a pleasant mix of bananas and white grapes, a whole lot of barrel wood, breakfast lemon muffin, bread dough, muted spiciness, bitter green tea. Big full pillowy body with a well levelled carbonation. Quite filling for a 5% wit. I liked this one more than I thought I would, aging a witbier in barrels sounds like a bad idea, but this beer proves that it can give interesting results. Warning: Side effects of any Upright Sole Composition consumption may include drunkenness, increase of late night snack appetite and uncontrollable urge to write a rating to tell strangers you drank a rare beer.
Bottle # 38 shared by Ucusty. Thanks Dave. Pours a cloudy yellow staw with a small sudsy head. Nose is wheat, light Chardonnay, lots of mineral, some apple cider notes. Flavor is more apple cider, minerals, some light funk ( probably the least funky of any sole comp I’ve had). translucent old, puffy white head gone quick, wispy top. Lemon-pepper nose, light paper and sweet esters, pleasant and simple. Flavor is dry wheat front, light pepper and citrus mid before dry earthy grains through finish, lemon throughout with spritzy carbonation adding life to simple profile. 750mL thanks to brainlair as Chardonnay Single Cask #9 of 58 bottles. Admins please move if the Chardonnay Single Cask Pure Wit is not the same as this listing. Pours low haze straw, glowing, with a thick white head. Webby lacing. Nose is phenolic/plasticy, a bit of wet dog/animal, some funk, paper, something odd like thyme/chamomile. Taste is doughy, spicy, very herbal tea like. Lighter body with some anesthetic tea character. Interesting but weak for the Sole Comp series.
