Old Tom Blend is composed of fresh Four with a gin barrel fermented saison from the Fall of 2011 that spent over a year in cask. The gin barrel charachter is defined by light oak notes and mixed botanicals leaning on juniper, pine and citrus which also impart a slightly slick moutfeel from their oils. The young Four livens the beer with herbal hop flavors and a different type of bright acidity. The blend comes across quite balanced between the flavors, maintaing a dry finish that stays smooth as opposed to agressive. If you can imagine a vermouth based on sparkling wine, it would probably be simialr to this. Enjoy now or cellar one additional year.

Hazy, light peach tinted golden beer is topped by a small white head showing low medium-low to low retention.
Gin/barrel immediately apparent in the nose. It’s not harsh or boozey, thankfully, but it’s also not joined by much beer character. Mostly botanicals, with some very soft, nutty wood tannin. I guess it kind of reminds me of that Gin barrel Pony pils from Half Acre. Lots of grassiness, light pepper notes and just a touch of soft, dry pale malts. No alcohol noted, nor flaw.
Same deal with the flavor; it’s soft, light and the gin is done well enough, leaving no harshness or bite to it, but the base beer is just too light. I see what they’re doing here and it’s admirable. Take a saison and barrel age it in gin to get the spicing that is popular in saisons. Just not enough saison to go around in this one, I guess. Perhaps it needs more time to let the spices fade? Whatever the case, I’ll stick to Saison de Pipaix for my spiced saison needs.

A - Hazy bright orange white head.

S - Peppery, cloves, yeasty aroma with very little sweetness. Very herbal, has a lot of yeast and maybe tropical fruits.

T - Taste is excellent. Oaky, crisp, apple, orange peels. Liquor, just really well done. the yeast presence is exceptional.

M - Mouthfeel, filling, bright, juicy with a subtle dryness.

O - This beer was exceptional. Not sure how old it is but very few of the Sole Comp beers are a let-down.

UPDATED: AUG 1, 2015 750 ml bottle thanks to Tectactoe, much thanks. Cloudy gold, thin lasting head. Aroma is strong amount of flowers, light gin barrel and soild amount of yeast. The gin barrel character is big and right upfront, oaky. Though the center it displays flowers and moderate yeast. I like the creativity of this brew.

750mL bottle shared by tectactoe opened at Ratebeer Farmhouse Magnum Tasting v1. Thanks, Anthony! Pours yellow gold with a white head. Aroma is wheat, floral, funk. There’s a lot going on in the flavor... There’s juniper, oak, sour wheat, citrus. Nice.

Poured from bottle thanks tectactoe at the Farmhouse Tasting event. Pours hazy golden with thin fading white head. Aromas of spice lemon and funk. Taste is grassy with lemon lime and has a lingering tartness.

UPDATED: JUL 26, 2015 Bottle: 9 of 62. Golden pour, hazy with a soapy white head. Nice aroma of tart lime, lemongrass, faint spruce, citrus peel, sour mineral water, small touch of yogurt. Grassy flavor with mild botanical notes, lime, lemon peel, a hint of tart apple, sour lacto. Dry finish, light & lingering with small tartness. Really really good stuff.

Bottle @ GT’s Cat Cabana. Thanks, GT. Lightly hazed golden pour with a white head. Fruity, apricot aroma. Apple cider, lime, and lemon. Gin, a lot of juniper herbal qualities, and a touch of vanilla. Tons of lemon-lime on the palate. Nice tart citrus, some cider, and juniper. A touch of rosemary, vanilla, and oak. A bit of flour and fresh dough malt character. Solid stuff.

Bottle, mucho thanks to GT. Pours a hazy yellow with average foam. Very floral bouquet of juniper, light oak, lemon-lime, faint pepper. The palate is very fresh and pure with lemon-lime, spring flowers, light rosemary, and a definite gin note which is quite complementary with everything else. Delicate finish.
