COMMERCIAL DESCRIPTION
This bottling represents the first time Upright has ever barrel aged the Five. It never struck me as a great candidate for maturation in oak, but after draining the Fantasia barrels it seemed like a good fit to refill them. The aromatics on the Five, both fermentation and hop-based, have pale stone fruit nuances that I knew would work well on top of the otherwise spent peaches still in the barrels. It was a bit of a trial, and only two casks were filled. After several months, the beer started tasting just like I had hoped, so the two were blended and either kegged or bottled for this Sole Composition release.

Bottle, 2013 vintage, thanks to Douglas! Pours hazy gold, very small off-white head, dissipates quickly with just a wisp of lacing. Aroma is Brett forward, funky, lemon, hints of acetone and oak tannin. Flavor is medium funky, light tart, Bretty and woody. Light plus body, low carbonation.

Bottle thanks to Gibson. Pours a hazy yellow gold with medium frothy white head that diminishes quickly. The aroma is funk, oak, lemon zest, brett. Thin body, oak, floral, brett, lemon, nice tartness, really enjoyed this.

Tasting at Matt’s
Cloudy golden color. Vinous aroma, some peach and apricot, nice sourness. The mouthfeel is very smooth, and stronger than expected, with mild residual sweetness; peach and apricots come through, but also mild astringency.
Balanced, excellent.

Bottle - Wonderful stone fruit and light Perfumy funk. Cloudy gold with a small white head. Sweet peachy notes with a nice herbal finish. Nose is amazing, but flavours are a bit thin.

Pours a medium dark orange colour with an off-white head. Aroma of peaches and cream. Taste is magnificent, with great stonefruit character and full body. Really into this. Aged in gin barrels?

Tap @ Beer Temple with Markoijelena and Zlotta (a.o.). Hazy pale golden color. Undeven white head with good lacing. Aroma’s: sour, fruity, brett-funk. Retronasal it’s sour, sweet fruits, brett-funk. Flavor is moderate to full sour, bretty. Light bodied. Finishes dry and light bitter. Too much brett for me.

UPDATED: MAR 20, 2016 Sampled from tap at ’Beertemple’. Clear, golden amber with a frothy, white head. Sourish-fruity, rather funky aroma of lemon, gooseberry, white grapes, oak and some straw. Moderately sour, fruity and funky taste of lemon, gooseberry, white grapes, oak and straw, followed by a medium long, rather tart and dry finish. Thin to medium body, spritzy and moderately astringent mouthfeel, flat. Nice, mellow and well-balanced sour ’Saison’.
