This bottling represents the first time Upright has ever barrel aged the Five. It never struck me as a great candidate for maturation in oak, but after draining the Fantasia barrels it seemed like a good fit to refill them. The aromatics on the Five, both fermentation and hop-based, have pale stone fruit nuances that I knew would work well on top of the otherwise spent peaches still in the barrels. It was a bit of a trial, and only two casks were filled. After several months, the beer started tasting just like I had hoped, so the two were blended and either kegged or bottled for this Sole Composition release.

Poured from bottle into a tulip: Pours golden with no head since it was flat. Aroma of tart funk, spices, and graoes. Taste is very tart, brett, and funk. Medium body, no carbonation. Its great.

Bottle split at the 5/7.5/10K tasting, from an IP trade with MJ, 30/12/14. Hazed orange with a moderate white swirl and spotting. Nose is light spice, floral notes, apricot, tangerine, hint of pine wood, rustic and earthy. Taste comprises peach, straw, grapefruit, spice, hay, mandarin, tangerine, lots of soft fleshy tropics just starting to decay. Medium bodied, fine carbonation, semi drying close. Solid subtle sour.

5 Kay, 7.5 Kay, 10 Kay Tasting. Thanks to Colin, opened whilst he was still getting over Melcher Street! Very hazy gold beer, small pale cream colour head. Palate is light and crisp and semi dry. Good fine carbonation. Very good fruits here - light sweet citrus orange with peach, nectarines. Light tangy white wine vibe. Light finish. Good stuff!

Pours hazy, barely translucent apricot with a fairly thick ivory head. Aroma has a strong overtone of spur fruit, apple with a bit of pear, and a note of fresh cut wood. Flavor is fairly sour, but not make-your-face-do-aerobics sour, with a woody undertone. Texture is rather firm and fizzy. Oak what a good one.

750ml bottle shared by Dean. Poured a hazed orange body with a smaller white dense foamy head. Aroma is sweeter, honey, flowers, old grass, bread. Flavor is similar to the aroma with a bit of sourness towards the end of the initial flavor, some lemon and funk, barnyard, flowers and some lemon/lime citrus along with a hint of cactus juices. Solid beer.

Bottle care of 10K Bois. It pours cloudy golden-orange with a small white head. The nose is fresh, soft, orange, lemon rind, candied citrus peel, straw and dough. The taste is crisp, orange sherbet, yuzu, lemon, light acidity, touch of peppery spice, tart edge and wood with a dry finish. Medium body and fine carbonation. Crisp, tart and juicy. Yum pretty much sums it up.

Bottle shared in London - thanks to Colin. Pours cloudy gold with a frothy white head. The nose has tart citrus fruits, herbs and grass, some dry pale wood. Light-medium sweet flavor with relaxed lemony tartness, citrus, some woody dryness. Medium bodied with fine carbonation. Cleansing finish, lightly acidic, more lemon, tangerine, rind. Lovely stuff.
