STLIPA, Revolution Series #7: We pronounce it “sta-leep-ah”, you pronounce it how you like. STLIPA, which is the acronym for St. Louis India Pale Ale, is actually a DIPA (Double or Imperial IPA- i.e., double the stats of a traditional IPA). We hope it’s a ‘sleeper’ that you’ll include in your set of favorite DIPA’s from one of the best beer cities in the world: St. Louis. Hops- Sterling, Cascade, Mt. Hood, Willamette, Chinook. ABV- 8.5%, IBU’s- 100, OG – 18.5 Plato (UCBC Goblet)

Bottle pours golden-syrup coloured beer under a two-finger white head. Slightly cloudy. Hop aroma is partly green citrus, some orange too, and mostly pine. Oily mouth feel. Not much malt character on tasting. The hop components are strong but broad enough to avoid being too one-dimensional.

Draft @ Marriott, STL. Light hoppy aroma, a little citrus. Color is clear, golden amber, light white head and nice lacing. Flavor of citrus (tangerine?). Med body. Overall a good DIPA, but I expected a bit more hoppiness.

50cl bottle, courtesy of gregwilsonstl, pours with a clear copper body that supports a full light tan head of foam. The modest aroma offers up mango and pineapple as well as mild spicy earthy hops and some citrus. The taste starts smooth with clementine and tangelo citrus and mango to pineapple hop flavor rolling into more and more hop bitterness. It then slides into a modestly bitter and dry finish. Tasty IPA.

Pours yellow with a nice head. Aroma: pretty subtle aroma of citrus, some pine tree. Taste: very nice refreshing taste, again with subtle taste of citrus, pleasant pine tree and a touch of sweetness from the malt. Also nice bitter, balanced palate. It is very clean and well balanced. This beer is super drinkable, with the 8% ABV well hidden-it can therefore be very dangerous. It is definitely a plus if one can brew a big beer, which at the same time is very clean and subtle. However, I am personally expecting more aromas and flavors from a double IPA.

Pours clear coppery orange with a large off-white head. Smells citrusy and some pine. Taste is pine that moves to citrus. Medium-bodied with a smooth texture and mild mouth-carbonation, Urban Chestnut STLIPA finishes with a smooth, soft sweetness.

Bottle at The Fountain on Locust in St. Louis (a great place for food + dessert, by the way). Aroma: More malt forward than you’d expect; lots of cereal and a little caramel. Hops mostly tend toward grapefruit with some orange bitters. Appearance: Light copper body with light streams of carbonation with a solid bone cap. Flavor: Malts and grapefruit lead with more orange bitters toward the finish; cereal intensive for an IPA, though it does dry out nicely in the end. Palate: Medium body, sticky texture, soft carbonation, abrupt finish. Overall: Too malty of an IPA for my liking.

Hazy orange body, lasting white head with decent lacing. Aroma of nuts, honey, hops, a hint of tropical fruits. Starts off very balanced between hoppiness and maltiness, then becomes more bitter and spicy. Smooth and full body. Not extraordinary, but nice enough and pleasant to drink.
