COMMERCIAL DESCRIPTION
Selección de manzanas autóctonas de la pomarada "Valverán" y proceso de elaboración mediante segunda fermentación en botella, tras realizar una crianza en la bodega subterránea, sobre lías de 9 meses. Durante todo este periodo, las botellas reposan a una temperatura de 14º C. en ausencia total de luz y vibraciones, para afinar los aromas y sabores de las manzanas con el carbónico, hasta el punto en el que se lograr el resultado óptimo de maduración. Edición limitada de 13.000 botellas.

UPDATED: OCT 27, 2014 Brut. 750ml bottle from Premier Gorumet, Buffalo. Pours a crystal clear pale juice color with a champagne like carbonation. Very lively but the head did not last long. Aromas of funky bacteria byproducts, hay, green apple. Taste is tart and only very lightly sweet. Flavors of sour apple, barnyard funk, some crotch cheese. Prickly carbonation. Strikes a nice balance between sweet, tart and funky. If this were completely dry and a touch more funky it could possibly be the finest drink in the world.

75cl bottle bought online at Tienda Masaveu Bodegas. Color is clear golden. Head is champagnish, it devanishes with time. Carbonation is ultramega high! Never seen anything like this, not even champagne or coca-cola! Aroma is tart, apple, citrus. This is kind of like a berliner weisse meets cider! Good job!

Possibly the best cider i’ve had which is admittingly few. Poured as starter prior to tasting menu at Blanca. Its bubbly and champagne like in glass. Nose of tart apple skin and wild yeast. Tastes of apples, barnyard, maybe Brett, woody, grass, some vanilla. super lively on palate and so friggin good great way to set off this amazing meal.

Bottle at Applepalooza 2012. Some bubbly to get in the mood. Good call.
Wine glass. Clear, pale gold body. A splash of champagne fizz.
Bright, crabby nose. Interesting barny/sweat undertone. Seaweed.
Taste is bittersweet skin & slight brine. A touch of dessert apples, but overall pretty dry. Moderately tart citrus. Just a touch of wild, yeasty funk.
Tight, rounded carbonation. Quenching acid. Mellow alcohol. Satisfying.
Great stuff. :)
