COMMERCIAL DESCRIPTION
The beer Cuvée des Jacobins is unblended old lambic, aged for at least 18 months in (French) oak barrels from the cognac region. These oak barrels are called ’Foeders’ in Dutch. It has a robust character but is beautiful and sophisticated with a full body and overtones of vanilla, dried cherry, stone fruit and cocoa. It is a complex, beautiful sour beer.

A beautiful mix of sour, tart, and funked yeast. The cherry isn't hiding, it's focused and upfront. There is also a nice barrel oak.

Not bad, but too sour. Mostly lactic acid; not a lot of acetic acid (vinegar).Fruit esters are decent.

Bottle - Samobor tasting - thanks Bazz! Reddish-amber body with a little white head. Pleasant, mainly berry-like aroma with mild aceto balsamico and very light glue. Cherry-like taste, tart, slightly salty. Nice, light, but it sometimes turns out to be a bit too tart-salty. Not bad!

Pours clear copper with a serviceable beige head. Aroma offers sharp, tart fruit and toasted malt. Flavor delivers seriously tart and sour fruit, mostly pomme, and lightly toasted malt. Mouthfeel presents fair body and fizz. How 'bout them monks.
