FRANÇAIS
Inspiré du cidre bouché traditionnel produit en Bretagne. Là-bas, le cidre contenant du sucre résiduel naturel subit une seconde fermentation en bouteille avant d’être commercialisé avec la lie.

Le cidre BRUT bouché sur lie est obtenu par la seconde fermentation en cuve close d’un cidre contenant du sucre résiduel naturel. Le procédé est suivi d’une filtration avant l’embouteillage. Un minimum de six mois de vieillissement sur lie est nécessaire pour assurer le succès de cette opération. Un cidre d’une belle robe au reflet vert et d’une fine effervescence. Toute la finesse et la fraîcheur de son nez s’expriment sous des arômes de pomme mûre, de poire, avec des notes d’épices et de mie de pain. En bouche, une explosion de fraîcheur et de grâce, relevant du parfait équilibre entre son caractère acidulé et le sucre résiduel.

Inspired by the traditional ciders produced in Britanny, where cider containing natural residual sugar undergoes a second in-bottle fermentation before being marketed with the dregs.

Brut, a cidre bouché aged on lees, is obtained through a second fermentation in closed tanks of cider containing natural residual sugar. It is then filtered before bottling, while having had a minimum of 6 months to age on lees. This cider has a beautiful robe with green reflections and a very fine effervescence. The finesse and freshness of the nose are expressed by aromas of ripe apples and pears with notes of spices and yeast. On the palate, the perfect balance of residual sugar and acidity from the aging on lees creates an explosion of freshness and grace.

Pale yellow, but with charming little effervescent bubbles that pearl to the rim of my glass. Du Minot is known for their sparkling ciders and I knew this one wouldn’t dissapoint. The aroma at first was a bit off to me, yes it smelled like apples but it was more of an apple purée that smelled like freshly regurgitated baby food. Thankfully, as I drank more it wasn’t as bad. The taste however, is totally spot on. Fresh and lively, great apple flavor, yes it’s dry but there is still a bit of residual sugar that makes it both refreshing and drinkable. This was the cider of the night for everyone at the tasting, and I agree. If only the smell was better, this would be an absolute knockout.

A pale blonde bubbly cider with aroma of tart apples, light Brett, light herbaceous character, damp leaves, interesting. In mouth, a nice sweet fruity apple juice with light mineral notes, light Brett, light funk, very nice. Mondial des Cidres 2017.

De fines bulles actives dans un liquide doré. Herbacé et fruité au nez. Des poires et du bois sont aussi présent. Des saveurs acidulées et amères qui sont légèrement secouées par une effervescence vive, toutefois brève.. Ça semble poivré par moment, mais faiblement. Les pommes du Québec sont à l’honneur; Macintosh et Cortland, sûrement. Ça se boit aisément et c’est bien appréciable. (1984-041016)

Récolte 2012. Cidre scintillant et effervescent qui offre au nez et en bouche des pommes fraîches et rustiques avec une touche de vin blanc. Simple mais efficace. Facile à boire sur le bord de la piscine. La langue me pétille et la femme qui nage à côté de moi est belle en tabarnouche.

Bottle (750 ml). Split 4-ways. Clear white-ish golden with a medium quickly vanishing white head. Aroma is of green apples, McIntosh, sugary notes, a bit of white wine and bread notes. Taste is soft with mild apples notes - more McIntosh than green apples here - sugary but not sweet, bread and hints of white wine. Medium body. Lively carbonation. Ample mouthfeel. Bone dry finish. Not as tasty and apple forward as their 2.5 % abv Crémant de Pomme we had just before but here again the mouthfeel is a strong selling point. Tasty, easy drinking for the abv and quenching because of the dryness. I liked it.

>> This is the red label c&c 750. Pours a champagne crystal clear white with soda foam. Nose is muted, carbon dioxide, green apple. Taste is white wine, bland Chardonnay. Finishes with a sharp tannic bite and is extremely dry. Apple skins, white wine acidity. It isn’t cidery enough for me, replaceable by run of the mill Chardonnay. Not the type of cider to seek out in ice cider land.

2013-04-25. Crisp bubbly body. Mild aroma of sweet apple, and similar fruity apple flavour, meant to be champagne like it has a mustiness to it that is similar, but I think I preferred the fruitiness of the Cremant de Pomme. Average to light bodied palate, effervescent. Decent but not my favorite of their offerings. Bottle, sampled at the cidery

Sampled from the bottle. Poured a clear pale blonde with visible carbonation. Aroma was full of sweet apples with a bit of a backing vanilla note. Flavor started with sweet apples that mellowed slightly and a bit of vanilla and earthiness coming in the finish. Carbonation helped the beer pop.
