COMMERCIAL DESCRIPTION
Caves is een amberkleurig bier van hoge gisting van 5,8%. Het bier wordt gebrouwen van gerst, tarwe en hop, zonder kleurstoffen of conserveermiddelen en zonder toevoeging suikers. Volgens Alphonse Swartelee, brouwmeester en bierhistoricus, zou Caves van alle heden gebrouwen bieren, waarschijnlijk het meest het middeleeuws bier benaderen: zoet en zuur.

Dark amber, white foam, medium carbonation. Sour and sweet. Aroma of lemon and sour apples. Well balanced. Good beer!

ALLOVATE (3002) - Perth, AUSTRALIA - AUG 26, 2013
Into a Saison tumbler at just on cool. Pour is quite angry and fuelled by surging effervescence that lifts a messy two inches of dirty white foam. Persistent head and frosting. The body of beer a radiant, ruddy chestnut . Very fruity, olfactory tickling bouquet displaying noted of plum juice, French cider vinegar, raspberry khoulis, Fizz-whizz™ sherbet and mulled wine. Tart, tongue twisting acidity grips on first sip. An odd amount of rough, nutty and roasted malts comes through also. Body is quite firm, the mouthfeel softly peppery. Very fruity like the nose with a vinous quality in the finish hinting at Madeira wine. All together this ale is extremely balanced, tasty and quaint. A very approachable brew! Shared a 25cl from La Cave à Bière de St Léo. It pours a clear amber in color with small and persistent whitish head. Aroma is sour and sweet. Sour and sweet aftertaste (although with some metallic notes). Smooth and nice.

(bottle) pours a slightly hazy amber-ruby colour with a frothy off-white head. aroma of acetone, vinegar, peaches, cherries, light banana and grain. flavour is quite sweet, with notes of bread dough, caramel, rotten reaches, more acetone, some butter and a tart finish. medium-bodied with average carbonation.

Bottle at the Jim=John tasting, Den Haag. Poured a clear chestnut brown colour with a thin broken white head. The aroma is sour and rather glue like with a sweet tooth decaying flavour. Truly awful.

Bottle shared by Deanso @ Jim is John tasting. Clear rusty amber color, no real head. Smell sour, burned plastic, barnyard. Taste lightly sourish but a lot of sugary sweetness, funk, vinegar and barnyard. Don’t like it.

Bottle shared. Pours clear brown with a small off white head. Aroma is pretty obnoxious, sweet tart overripe fruit. Flavour is heavy swwet and equally bad.

Bottle @ ABC Beers Jim=John tasting. Clear amber pour, no head. Aroma of sweaty, meaty balsamic vinegar, very offensive. Flavor is varnish, balsamic vinegar and some fruits. Weird sour sweetish.

Bottled, BBE 28.09.2013. Pours clear amber in color with small whitish head. Notes of sour vinegar, earthy some barnyard and even some sweeter notes as in toffee are to be found in aroma. Burnt bready malts, some vinegary notes along with fresh apples and some more sweeter notes in taste. Interesting beer this one. Sour and sweet aftertaste. Smooth and delicious.
