COMMERCIAL DESCRIPTION
Caves is een amberkleurig bier van hoge gisting van 5,8%. Het bier wordt gebrouwen van gerst, tarwe en hop, zonder kleurstoffen of conserveermiddelen en zonder toevoeging suikers. Volgens Alphonse Swartelee, brouwmeester en bierhistoricus, zou Caves van alle heden gebrouwen bieren, waarschijnlijk het meest het middeleeuws bier benaderen: zoet en zuur.

F: thin, egg-white, not long lasting. C: red to coppery, clear. A: dark berries, vinegar, red vine, grapes, hint of Brett. T: red berries, hint of vinegar, foeder, balsamic, caramel lactic tones with subtle spicy, medium body, low to medium carbonation, quite good, 0,25l bottle from Bierhalle Deconinck.

Sampled from bottle at deanso’s. Bottle courtesy of deanso. Clear pale amber with thin off white head. Sweet malts, apple vinegar, sugar, woodglue, dusty cardboard. My favorite aromas nudge nudge wink wink. Over mesium sour compensated by shitload of sugary sweetness. Medium body, sparse carbonation and plastic finish.

Bottle shared thanks to deanso. Clear amber with off white head. Green apple, apple vinegar, light acetone, lots of sugar, some stale cardboard. Medium sweet and sour. Medium bodied. Basically massive apple vinegar with sugar.

Gummarus Feesten 2015 edition, 25 cl bottle, drank at In St Gummarus, Lier. Pours dark amber, persistent tan head. Aroma is intense: mustard, honey, Modena balsamic vinegar, dark fruit, tobacco, chili pepper. Strange, complex and wild. Taste is dry, very dry. Thin, fizzy and sour. Long persistence with hints of leather and, again balsamic vinegar. Strange and rich.

Clear brown colour with thin soapy head. Aroma has lots of oak and a touch of malt vinegar. There’s a genuine sweetness to the flavour and it mellows the intensity of the sour notes nicely.

250ml bottle in the Bier Paleis, Brugge on 5th Feb 2016. Red hue to the brown body, the head a thin cream coloured affair. Semi-sour, tart feel, cherries and raspberry flavoured: interesting but a little too sour for my palate.

Bière mûrie en foudres de chêne, avec du malt d’orge et du froment, pour la gilde des Heren van Lier, d’un niveau abv de 5,8 % mais d’une capacité de 25 cl … (lamentable). Couleur ambre moyen, à la clarté nette. Bulles fines partout en myriades, très bien. Mousse beige moyen, qui nappe à 1 mm. Arômes de bois de fût, vinaigre de vin, pointe de Sherry et Riesling. 1ère bouche douce, sur du raisin, bois de fût, avec aigreur. Arrière-bouche sur l’aigre d’un beau vinaigre de vin. 2ème douce sur un vin chaud à la cannelle. Arrière-bouche bien liée, avec l’aigreur cette fois tempérée. 3ème au bel équilibre bois/raisin, mais ensemble trop sucré !!! Arrière-bouche qui atténue le sucre, mais laisse une impression de mièvre. Longueur à le belle douceur, mais aucune complexité. Jambes fines, marquées, un peu collantes. Alcool faible, il tient malgré tout sur la longueur (si l’on peut dire … 25 cl !!). Finale sans envergure, un peu sirupeuse. CONCLUSION : « beste bier van de wereld » selon Félix Timmermans, qui n’y va pas de main morte !!, et qui confond bière et sirop !! Il ajoute un peu imprudemment « om geen wijn te bezien » … Je lui réponds quant à moi : dat staat nog te bezien ...

On tap at Café Sint-Gummarus , Lier, Friday 20th March 2015 Amber in colour with a slim white head. The nose is very similar to Rodenbach, in fact the taste is also similar. Sharp, and zippy, sour and fruity and tart. Refreshing sour beer. Nice. A7 A4 T7 P4 Ov14 3.6

77ships (10770) - Antwerpen, BELGIUM - FEB 2, 2015
330 ml. bottle split with Kogymo. Procured from Willems & Zoon. I have never heard about this nor have I ever seen it before but apparently the name has quite a bit interesting history behind it. This is nothing like the original beer, no recipes appear to have been written down for the original & the original that was sold in Lier was apparently a sour & golden beer of 11,7% ABV, so nothing like this one. Pours a dark brownish amber. Nose is sweet foeder, barrel, balsamic vinegar & sugar. Taste is lightly metallic like some lesser glasses of Rodenbach Foederbier, tastes of malt, cherry, foeder, brown sugar sweet, light herbs, balsamic vinegar, flowers, caramel. Lightly watery. A lesser brother to Duchesse De Bourgogne but still this drinks pretty well even if its clearly not at the top of the game.
