On tap @ Prohibition Pig (Waterbury). Clear golden with a medium white head and intense lacing. Aroma of banana, malt, Saison yeast, spices and light citrus. Taste is moderately sweet with spices, light citrus, malt, light banana and Saison yeast. Medium body. Quite dry. Moderate carbonation. Very good Saison. Sessionable.

Sample pour at a festival. Pours mostly clear yellow with creamy white head. Aroma is cereal and cracker malts, floral notes, light herbs, farmhouse yeast esters, and light fruit notes. Flavor is dry malt base, yeasty and light fruit esters, light hops, and faint herbs; dry finish. Light/medium body and medium carbonation.

Picked up a single 12-oz bottle at Heritage Liquors in Maplewood, Minnesota. Pours a clear golden straw colored brew with an average sized but fast dissipating off-white head. Aroma of saison wheat, coriander, some clove, golden grain malt and a touch of Ivory soap. Taste is light to medium bodied, average carbonation with flavors of coriander, lemon zest, golden grain malt, and a hint of wintergreen. Finish has a sharp bitterness followed by some spice potpourri aftertastes.

Let me preface this review by saying that I went in really wanting to love this beer - given the quality of helios, who wouldnt? - by the middle of my first bottle, I was trying really hard just to like it - now, by the middle of my second bottle, I am trying hard not to hate it - first of all, it is not a saison - it is a dry wit - usually, I can be forgiving of adjunct-laden saisons - I had a local one recently that had quite a few adjuncts, but still managed to be quite tasty - perhaps because this is overspiced to the point of being unrecognizable as a saison, I cannot be forgiving - I like the dry, crisp character of the beer - however, all I can taste and smell are spices and a hint of tart citrus - overly bitter throughout - where is my baby helios, god dammit!?

Pours clear bright gold into a tumbler. White head with little retention recedes to hug rim. Hay, coriander and pepper aromas. Sweet yeast and bandaid upfront turning dry and peppery before the lasting sour marshmallow finish.

Reviewed from notes. The appearance has a hazy pale golden yellow body with a two finger white foamy head that sticks around for most of the beer, some light sticky lacing is left in rings. The smell has a citrus/lemon coming through with some light pepper and a bit of mint shows up after a bit of warming. The taste has all of those previously mentioned flavors coming through in an earthy flavorful way, earthy aftertaste and finish. The palate is light to medium, sessionable, adequately carbonated for the style and for me leading to a nice smoothness all around. Overall, I say this is good for the style and very good to me.

A fresh bottle. Strong and pleasantly herbal nose pushing lemon and rose hips in with the light tartness. With the cleanser feel, has some slight wittish character. Lightly hazy bright yellow body with a lacing white head. Taste is faintly sweet to start but dries out quickly as the bitterness picks up, not so much hoppy as stripping and herbal, nailing those medieval traditionals and bringing light flights of purifying astringency without the rubberiness. Peel and pepper, grainy hay. Clean yeast, fullish body, seems to be less alcoholic than it is, though I think Id prefer a lighter body. Honestly, Im uderwhelmed, but its fresh and repeatable.

UPDATED: JUN 3, 2013 Had again today, this time froma bottle, not bad at first but has a strong astringent aftertaste. raised from a 1.9 to 2. old rating: On tap at mad mex. Creamy head. Slight perfume aroma. Quite bitter, almost like an IPA. Chewing on green grapefruit rinds manifests itself on the back of the throat. Same with finish. Not impressed. Some mild co2. Was expecting something a little more saison like.
