Let me preface this review by saying that I went in really wanting to love this beer - given the quality of helios, who wouldn’t? - by the middle of my first bottle, I was trying really hard just to like it - now, by the middle of my second bottle, I am trying hard not to hate it - first of all, it is not a saison - it is a dry wit - usually, I can be forgiving of adjunct-laden saisons - I had a local one recently that had quite a few adjuncts, but still managed to be quite tasty - perhaps because this is overspiced to the point of being unrecognizable as a saison, I cannot be forgiving - I like the dry, crisp character of the beer - however, all I can taste and smell are spices and a hint of tart citrus - overly bitter throughout - where is my baby helios, god dammit!? Bottled. Poured clear, bright golden with a sticky white head. The aroma picked up bright spices (grains of paradise and a little coriander maybe?) ofer soft bready malts.. almost a little green garlic toward the back of the nose.. kinda weird. The flavor found tangy spices similar to the nose, plus grapefruit zest throughout.. light bready support again.. finished spicy and tangy. Very average saison. Aromas of honey and citrus. Maybe a touch of funk too. A touch of sour and bitter. Almost tastes like a pale lager. Meh.

Yellow almost-clear pour some white head. Citrus grassy hop aromas, lemons yeast. Perfume flavors on the tongue, some funk, acidity fades to banana yeast then to very strong bitterness. Dry clean palate and mid body. A bit of a departure from the style definitely american. I wouldn’t session this as it is a bit too harshly citric and bitter. 12 oz bottle into a pint glass.
A: Pours a mildly hazed straw color. The head is a fluffy two finger white shade that collapses pretty quickly, but leaves nice lacing on the glass.
S: There is a decent amount of complexity here for a 4.5% saison. I pick up coriander, orange peel, grassy hops, sage, and black pepper. However, there’s also a vegetal green pepper note that’s detracting - and even worse, it gets stronger as it warms up.
T: This is weird. It opens up fairly citrusy - which I like - but ends on both a watery and a vegetal note. Decent (if overdone) spicing in the middle gives way to a bell pepper finish that really rubs me the wrong way. The flavor profile sorely lacks balance and cohesion.
M: Very clean and dry, which I like. Very astringent too, which I don’t. This beer seemingly parches the palate excessively in the name of drinkability. Ah well, the latter is good, at least.
O: Swing...and a miss. This one was quite disappointing, considering Victory makes another saison that’s really damn good. And it’s another damning reminder that they really need to put Helios in 6-packs! mjhall89 (36) - - APR 16, 2014

Bottle, pours a cloudy golden yellow with bright white head. Pear and yeast in the aroma. Taste of lemon, pear and spicy yeast.
