Brett/peppercorn saison

Thomas is the third installment in our “Bearded Farmer” series of saisons. In keeping with the farmhouse brewing tradition, the idea here is to brew each successive beer a little (or a lot) differently than the ones before it.

This Saison-style ale uses Pilsner & Munich malts with Wakatu, Motueka & Pacific Gem hops, and it is fermented with a single strain of French saison yeast

Pour is a cloudy gold color with a fluffy white head. Nose is very fruity and spicy, peppercorns, bright tropical fruits, grassy funky smell and clove. Lots of the spice on the taste too, banana, mango, yeasty esters, wet grass, and a nice saison funk. Medium to light bodied, great beer for the summer.

Bottle: Thanks, Jason. Rustic sunburst color with an opaque center & cloudy, translucent edges. Very volatile, producing a huge, chunky white head that lasts for days. Potent yeast aroma. Bread, clove, orange peel, coriander, banana, sweet fruity esters, random spices, wood, a touch of must. Flavor is super-funky, much more than the aroma. Notes of cheesy barnyard funk, sweaty horse, & mildew. Still heavy on the yeasty spice with lots of clove, bread, & rotten banana. A bit of citrus in the back-end with lemon peel & orange rind. White pepper finish, lingering spice. Yeast is super, super dry, creating a very vapid, scraping finish. Almost a bit too dry. Expected a lot more from this one.

Aroma: The aroma is heavy spice/pepper, with plenty of Saison yeast, some funk, a citrus hints
Appearance: It pours a cloudy orange color with a large beige head that sticks around for a while
Flavor: The flavor is spice/pepper up-front, a little funky mid-palate, floral, with orange/citrus late
Palate: This one is medium bodied, with a lively-to-fizzy carbonation, and a dry, tingly finish
Overall Impression: This is a really nice pepper-forward Saison. It has something a little "Duponty" about it, especially in the initial aroma, which I mean as a compliment for sure. That aroma was the standout for me. This is well-made and pretty good.

hopscotch (11409) - Vero Beach, Florida, USA - OCT 10, 2014
Bottle... Pours cloudy and peach-colored with a small, creamy, white head. Great retention. The nose is an assortment of stone fruits, a light note of banana, a mild clove-like phenol and a whisper of marmalade. Medium to full-bodied with tingly carbonation. The flavor is fruity and mildly tangy with a modest measure of bread-crust bitterness and a suggestion of clove. Crisp, refreshingly dry finish. Bottle courtesy of ctipping!

Bottle from unknown,bottled 5/8/13. Pours slightly cloudy golden amber, lots of fluffy off white head. Aroma sourdough, sugar cookies, some astringent citrus. Body fluffy and lively, with a sweet yet spicy finish, body balanced well. Superb, really.

Pours a hazy golden orange from the bottle with huge fluffy off-white head that lasts and leaves light webs. Aroma of caramelized malt and funky farmhouse yeast with a hint of sweet lemon and hay. Taste is oxidized malt and typical French saison yeast, hint of earthy funk on top of sweetness. Should have drank this fresh or with more age, maybe would have had better hop profile or become more bretty, but its still very nice. Good carbonation, less malty and more bitter as it warms.

Bottled 5/13 Very hazy golden orange with 3 finger foamy head which grows to 4 fingers. Tropical hop nose (like a mild IPA). Taste has tropical fruit, little bit of dank hops, big malt profile, corner of bread thrown in, great yeast flavor. The hop bitterness carries through to the finish, but it’s buttery and not overpowering. Excellent stuff.

Petkus331 (389) - Redford, Michigan, USA - DEC 25, 2013
An aroma of pineapple, grape, grass, and some strawberry. Appearance is a hazy golden yellow with a giant white head and some minor lace. Taste is very juicy, minor sour white grape and apple flavor followed by some big and unbalanced grapefruit bitterness. Palate is a little syrupy, but the foam helps the texture significantly. Overall, it is good, but I feel the unbalanced bitterness detracted from the rest of this beer.

Poured a light cloudy pale yellow color with aromas of hay, light toast, malt, a touch of citrus and some grass. Flavors were the same a light spice in the flavor but not overpowering.

Bottle shared thanks to lukaduke. Pours a copper color with a big white head of foam. Musky and spicy aroma with some yeasty and herbal qualities coming through in the taste. Pretty good. Lighter body and mouthfeel, especially considering the ABV.

Bottle. Clear light yellow pour with a white head. Grassy aromas. Grass and floral hop notes. A bit acidic. Average body and mouthfeel.
