COMMERCIAL DESCRIPTION
A reddish brown trappist ale, malty and fruit, featuring a 3 week secondary fermentation. This ale has a full, pale yellow head. The bouquet is full of esters and fruitiness. Notes of ripe banana predominate. The taste is fruity and slightly bitter, with a long, dry finish.

Beautiful deep brown colour and great head. Heady aroma of almond, toffee, apricot. Taste is deep, pungent and complex; Belgian yeast, dark sugar, almond, apricot, some chocolate. Dense but expertly blended, belying its strength. This is what beer is all about, pretty much perfect.

Bottle approx. 1 year after bottling date. Beautiful dark beer with lasting thick head. Aroma: malty, plums, bread and a hint of alcohol. Taste the same: complex and very balanced with a pleasant bitter aftertaste ( burned malts? ). Not a one-taste-bomb but a subtle gem. Mouthfeel very nice: full bodied, soft carbonation, slight alcoholic tingle.

330 ml bottle from Theatre of Wine. Pours hazy brown with beige head, not lasting long. Aroma of caramel, marzipan, malt, slight alcohol. Taste is yeasty and malty, no bitterness, marzipan and dark fruits.Full-bodied, heavy, warm and smooth. Very good beer.

Par défaut, je mets toujours 5 à l’apparence, car une bière c’est avant tout des arômes, des saveurs, du plaisir gustatif... Bref, belle brune transparente avec des reflets grenat, surmontée d’une mousse fine ivoire. Nez charnu, caramel, chocolat au lait, raisin sec, cassonade, sirop d’érable, pain d’épice, sirop de canne, pomme et poire cuites, vanille... Très gourmande ! Houblons et alcool très discrets, avec des effluves de mandarine, d’orange... Carbonatation moyenne. En bouche, plus de sécheresse qu’attendue. Première gorgée brute avec une pointe d’amertume et d’astringence qui persistent sur la deuxième. Saveurs minérales, longueur assez courte, je reste sur ma faim. Troisième gorgée qui confirme les précédentes, avec un arrière goût sur les céréales et toujours cette amertume qui colle au palet. La texture est un peu sur l’eau, elle gagnerait à être plus consistante. L’alcool est bien dosé mais trop peu exploité. Final sur les herbes, la terre, le bois, les levures. Pas une mauvaise bière du tout, mais pas forcément la meilleure Dubbel d’abbaye. Je préfère nettement la Maredsous 8 ou la St. Bernardus Pior 8, voir la Chimey Red dans ce style... Bouteille 33cl, V&B Grenoble.

330ml bottle pours very dark brown with pale tan head. Remarkable aromas of caramel, dried fruit and bread. Tastes of ginger bread, caramel malt, molasses, fermented fruit, marzipan and alcohol. The complex layering and delicate balance make this beer very special. Long sweet finish with honey and fruit characters. Almost no bitterness. Can’t wait to try again!
