COMMERCIAL DESCRIPTION
A strong, dry and spicy trappist ale. The product of a secondary fermentation lasting 5 weeks. This is a complex ale with a fruity aroma and a nice nuanced hop scent. It is soft and creamy in the mouth, with a bitter touch carried by the fruity aroma. An exceptional ale, with a great deal of finesse and elegance, and with a splendid long after taste.

Cloudy, golden color with a creamy, thick head. Nothing unique in the aroma, typical (or maybe this one sets the standard) for Belgian Tripels. Personally, I thought the alcohol came across stronger than the 9.5% stated but it was still smooth and balanced. Viscosity was a bit thicker leaving an obvious coating on the roof of my mouth. It didnt last long and the aftertaste was earthy and a bit fruity. I love Belgian Tripels so it is rare that I can score one average or lower.

Beer #2 in the "How the Hell have I not rated this??" series. Bottle drunk some time 2005-2008, cant remember exactly.
Large, foamy white head tops a light blonde body, good clarity and sediment left behind. Very strong retention.
Brett! and lots of it, in the nose. Light perfume, light band aid and lots of fruity esters to match; nectarine, pear, apple. Delicate honey, seemingly nicely attenuated lies behind it. Its joined by black pepper and just a hint of marmalade. Wow, this is one of the better "Trippels" Ive had, though its not really a trippel. No big breadiness, absolutely no clove. Not even all that yeasty, in comparison to most other trappist beers. No alcohol or flaw.
Fruity, dry and with enough residual base malt to provide a soft, but not too soft, texture. Some light graininess and lots of ester character, with moderate bitterness, lots of black pepper phenol and easygoing, lightly funky brett notes (light lime, hickory, band aid). Tight, natural carbonation is very high, and needs time to breath. A bit of sharpness and alcohol on the end, mixed in with the big ester character, but its not really problematic. Nice honeyish malt, grain and light brett lingering.
Looks like this one has gone downhill in recent years...so I probably just let my memories rest on this older bottle.

Yellow colour with a small head with a mild fruity aroma. Slightly sweet taste with fruity and spicy hints. Full bodied, smooth and a classic trappist beer.

Aroma Honey and cherry , dark blonde appearance with little foam, not strong initially to palate but full of flavours when expanding in the mouth, bitter but keeping the honey nuance in the sides if the tongue, that remains in the last palate even concealing the alcohol point

UPDATED: NOV 15, 2016 Trs bonne bire triple trappiste, forte, chaleureuse, tiquette sobre la graphie soigne, bon got sur le palais et en fin de boiche, un classique. Pas de fioritures (ni "fruite" ni got particulirement caramlis). Je la trouve plus facile boire que la Chimay blanche (triple) l?amertume plus prononce. Pas encore trop chre en rgion parisienne et facilement trouvable.

Bottle, aged version, bb 11.2016, to celebrate my birthday. Pours hazy yellow/orange with small white head. Fruity aroma of peach, mango combined with spices and flowers. Taste is medium sweet, has estery, fruity character, with very light acidic notes, light bitterness in finish and lots of spices. Full body, nice light alcohol bite, very smooth. Very good trappist classic, rich fruity aroma and taste, maybe just a little too spicy for me.
